Recently we were discussing our favorite recipes as a family, and my grandmother unexpectedly remembered how I loved it as a child. lush lazy cabbage rolls which she cooked for us in a saucepan By own recipe . I was quite surprised, because I don’t remember it at all. However, the thought, as they say, stuck in my head, and I began to dig through my grandmother’s notebook again and - oh, miracle! Indeed, on the very worn page there was written a recipe for the good old lazy cabbage rolls, which remained forever in the memory of everyone who lived in the USSR.
My grandmother is a real culinary genius who knows how to write a recipe so that even a child could make these beautiful and tasty products, and I, as a direct successor, even more so managed to stew them just like in childhood. Today I will share with you her experience in this regard, so that you can easily prepare this wonderful example of Soviet cooking for yourself and your children.

What you need to know before cooking

Kitchen appliances:

  • a metal frying pan with a non-stick coating (you can also use cast iron) with a diameter of 23 cm;
  • several bowls (deep) with a volume of 320 to 930 ml;
  • tablespoons;
  • teaspoons;
  • measuring cup or kitchen scale;
  • towels (paper, linen or cotton);
  • wooden spatula;
  • medium sieve and steel whisk;
  • blender or food processor.

Warp:

The proposed recipe does not involve the use of additional components that improve the aroma and taste of the finished cabbage rolls, but you can safely experiment with spices. In addition, carrots can be replaced with fresh ones. bell pepper, just add less of it, about 3 pcs.

Additionally:

  • 25 ml sunflower oil;
  • 6 g ground cardamom;
  • 30 g of fresh herbs (parsley, cilantro, dill).

Cooking sequence

Preparation:

  1. We carefully clean the cabbage from rotten and rotten leaves, then rinse thoroughly.
  2. Then finely chop it with a knife; you can also use a food processor with a special attachment for chopping vegetables.
  3. Mix the cabbage mixture thoroughly with a spoon and let it stand for about fifteen minutes at room temperature.
  4. Defrost the minced meat and repeatedly run it through a meat grinder or food processor.
  5. We peel the onion and finely chop it or chop it using a blender, wash the carrots, peel them and grate them coarse grater.
  6. We wash the greens under running water and chop them quite finely.

Onions and carrots can be prepared in another, more appetizing way: the day before, pour a teaspoon of vinegar over the chopped vegetables, add a little salt and leave overnight. The result will be a very appetizing mixture that will go perfectly with your cabbage rolls.

First stage of preparation:

The minced meat should be well fried and not burnt - to do this, constantly stir the mass and monitor the intensity of the fire. I recommend simmering the workpiece under the lid, this way the risk of overcooking the workpiece almost completely disappears.

Second stage of preparation:

Lazy cabbage rolls can easily be fried in a slow cooker, since this amazing device is literally designed to do the job yourself. It’s mind boggling how much effort and nerves you’ll save when cooking in a cartoon! The prepared cutlets with minced meat are fried in a multicooker bowl quickly enough, and the cabbage rolls ultimately retain their shape perfectly and do not burn at all.

Made! Yours are amazing delicious lazy cabbage rolls completely ready! You can serve them right away, but it’s best to further decorate your little ones depending on your personal preferences. For example, sometimes I just sprinkle my own whites herbs or ground black pepper, and sometimes I still prepare an excellent decoration: I mix one part of sour cream with two parts of mayonnaise, add my favorite seasoning with salt and cover the finished cabbage rolls with the resulting mixture. It turns out very appetizing, so try it. If you have your own way of decorating cabbage rolls, please share it with me!

Lazy cabbage rolls are made from cabbage, minced meat and rice. You can give them any form at your discretion. Some housewives cook them in the form of large cutlets. And those who are even more eager to reduce cooking time take necessary ingredients, just cut them and stew them in the oven, in a saucepan, in a slow cooker, or in a frying pan.

This dish, for example baked in the oven, has another good advantage compared to the traditional one (with a whole leaf of cabbage). But the fact is that children, although not all of them, do not really like stewed cabbage leaves, they open them and eat them meat filling, and the leaves are removed to the side. There is no need to unwrap anything here, since the cabbage will already be cut into small pieces and it will be almost invisible in the cutlets, which is quite suitable for little capricious children.

So, now I will tell you recipes for making lazy cabbage rolls, which are illustrated step by step with photographs. And of course, for those who missed the previous recipe

Ingredients:

  • Minced meat – 450 gr
  • fresh cabbage - 300 gr
  • onion - 1 piece
  • carrots - 1 pc.
  • rice - 1/2 cup
  • egg - 1 pc.
  • sour cream - 150 gr
  • tomato paste - 1 tablespoon
  • dry spices - 2 pinches

Cooking method:

First of all, rinse the rice thoroughly, fill it with about 1.5 cups of cold water and boil until half cooked, not forgetting to add a pinch of salt.

Next, we take fresh cabbage, and I’ll immediately say that if it is hard, then to soften it is better to pour boiling water over the leaves that we will use for about 5 minutes, then drain the water, squeeze out the leaves a little and chop them the way you like best, into cubes or strips and add to the minced meat.

We transfer the cooled rice there and beat in one egg.

Peel the onion and cut into small cubes, grate the carrots on a medium grater and add to the rest of the ingredients. Add salt, pepper and your favorite spices, then mix thoroughly.

For the sauce, we need to mix tomato paste with sour cream and add 100 ml of water and bring until smooth.

Place a frying pan on the fire and pour a couple of tablespoons of water into it. We begin to form cutlets or small balls from the minced meat. And place them in one row in a heated frying pan.

All that remains is to pour the sauce we prepared over the cutlets, cover with a lid, reduce the heat to low and simmer in this way for 40-50 minutes.

And of course, during the extinguishing process, periodically check the liquid level; if it is low, then you need to add a little water. The most important thing is that our cabbage rolls do not burn.

The dish is ready, serve it to the table.
