Preparation
Peel the onions and finely chop the vegetables.

Clean the herring and fillet it. Cut the fish into small cubes. In a separate container, combine the herring and onion. Mix both ingredients well.

Peel the pickled cucumbers. Finely chop the vegetables.

Using a mixer, beat the softened butter for 5 minutes.

Boil the eggs and peel them. Grate each one on a fine grater and place the mixture in a separate container.

Chop the dill. Mix cucumbers, eggs, oil and half the dill. Be sure to beat this mass with a mixer until a homogeneous consistency is formed.

Chop the parsley and green onions. Take cling film, cut a rectangular piece and spread it on the table. Pour the greens mixture onto the film and spread it over the rectangle.

Place herring and onion mixture on top. Spread it with a spoon.

The next layer will be a mass of butter and eggs.

Roll everything tightly into a roll.

Be sure to twist the ends, then the film will not open. Place the roll in the refrigerator overnight. In the morning, cut everything into pieces and carefully remove the cling film. Ready! herring roll

Let's look at the cooking process.

  • WITH salted fish remove the skin, cut the carcass along the back and carefully remove the backbone with bones. Then cut along the belly, carefully remove all the bones from it.
  • Lay cling film on the table and place fish fillets on it so that the bellies overlap slightly. Cover with a layer of film and lightly beat with a special hammer. It is important to do this with extreme care so that the fish fillet is not damaged. Remove the top part of the film. For all herring rolls, this method of cutting and forming blanks is suitable.
  • Coat lightly salted fillet with a layer cream cheese, sprinkle with seasoning and chopped herbs.
  • Chop the olives finely and spread over the greens. Roll the fish into a tight roll. Wrap tightly in 2 layers of film.
  • Place in the freezer for a couple of hours. Then take it out, unroll the film and cut medium-thick roller pugs. Serve them chilled.

Rolls with cucumber

Ingredients:

  • 2 herrings;
  • 2 fresh cucumbers;
  • 100 g soft cream cheese.

The step-by-step recipe is quite simple.

  • Prepare fillet according to the technique from previous recipe. Grease the fish preparation with a layer of cream cheese. Cut the cucumber into small strips and place on top of the cheese.
  • Roll the fish into a roll. Wrap in film and place in the freezer for 60 minutes.

Before cutting into portions, remove the film.

“Bulgarian” rollmops with pickled cucumber

These herring rolls can be served as a stand-alone snack, or you can make canapés on toast with them.

Ingredients:

  • 1 herring fillet;
  • 2 bell peppers;
  • pickled cucumber;
  • 100 g butter.

Cooking recipe:

  • brush the fillet with soft butter (slightly melted);
  • cut the cucumber and bell pepper into small cubes;
  • place the vegetables on a layer of butter, and roll the fish with the filling into a roll;
  • freeze for a couple of hours;
  • Unroll the film and cut the large roll into small rolls.

Herring and processed cheese rolls

Ingredients:

  • 2 pcs. lightly salted fish;
  • 3 tsp. mayonnaise;
  • 3 tsp. sour cream (15%);
  • 2 tsp. vinegar (wine and the like);
  • 1 tsp. brown sugar;
  • sea ​​salt;
  • ground black pepper;
  • 150 g processed cheese;
  • 2 pcs. cucumber (pickled);
  • bell pepper (marinated);
  • fresh dill;
  • 1⁄2 white onion;
  • “Borodinsky” bread;
  • 1 tsp. mustard;
  • olive;
  • greens, lettuce leaves.

How to cook:

  • clean and cut fish carcasses into boneless fillets;
  • On the film, place the fillets of one herring with their bellies overlapping each other, cover the top with film too, then beat the fillet until the pulp is of equal thickness throughout the entire piece;
  • Unscrew the top of the film and coat the fillet with soft processed cheese;
  • Finely chop one of the cucumbers, also chop the pickled peppers, chop the dill with a knife;
  • sprinkle vegetables and herbs on top of the layer processed cheese;
  • roll the fish into a roll on a film and wrap it tightly, put it in the freezer for three hours;
  • Cut the remaining herring fillet into strips;
  • mix mayonnaise and sour cream in a bowl, pour in white vinegar, add mustard and sugar;
  • cut the pickled cucumber and onion, add salt and pepper;
  • pour the marinade over the fillet and place in the refrigerator overnight;
  • cut the bread into pieces, then cut out small circles from them with a glass - they will be needed for herring rolls;
  • under the pickled herring, cut pieces of bread randomly and dry in the oven until the croutons are soft;
  • Peel the frozen roll from the film and cut into pieces 0.5-1 cm, place on bread mugs in the form of canapés;

Cover each crouton with a lettuce leaf and place mustard herring on top.

Spicy rollomps

Ingredients:

  • fish fillet (1/2 carcass per serving);
  • carrot;
  • bulb;
  • 2 pcs. pickled cucumbers;
  • 1⁄4 tart apple.

Marinade:

  • 2 glasses of water;
  • 1 cup 9% vinegar;
  • 2 tsp. Sahara;
  • cinnamon;
  • carnation;
  • black pepper;
  • laurel leaf;
  • vegetable oil.

Preparation:

  • If the fish is overly salted, it is better to soak it;
  • finely chop the carrots and onions;
  • boil water, adding sugar and the necessary spices;
  • Boil the vegetables until half cooked, pour in the vinegar;
  • While a new boiling stage is awaiting, cut the apple into strips - it’s better to make thin strips, it’s tastier, then throw the apple into the boiling marinade;
  • when the water boils again, remove the pan from the heat and cover with a lid, let it cool;
  • For now, beat the herring fillets through the film on both sides;
  • chop the pickled cucumber into thin slices, like an apple;
  • Place the cooked vegetables in a colander to drain the marinade;
  • place on the wide part fish fillet a portion of vegetables and a chopped cucumber, roll into a roll; for strength, you can pin it with a toothpick;
  • place the resulting roller mops in layers in a pan;
  • Place some pickled vegetables on top of each layer and sprinkle with oil, pour over the completely cooled marinade;
  • Cover the top with a lid and keep in the cold for two days.

The first step is to clean the herring and then fillet it. Remove the skin from the fillet and carefully remove all the bones.




Place the herring fillets on cling film so that the bellies overlap. Cover with cling film and then beat the top a little with a hammer. The fillet should eventually become absolutely identical throughout its entire thickness.




The cheese for herring rolls needs to be heated to room temperature, simply laying it out on the table in advance. We grease the top of the herring with cheese; if it is warm, then this will be quite easy to do. Do not overdo it with the spread, otherwise you will not be able to wrap the roll.
We used the sandwich spread. But we still recommend that you use processed or curd cheese.











Sprinkle them on top of our herring.




Using film, we roll the herring into a roll, wrap it with film on top, and then put the herring roll in the freezer for a couple of hours so that it hardens.
Then cut the roll into medium pieces with a sharp knife.

Lightly salted herring is healthier than heavily salted fish. Herring producers add a large number of harmful preservatives to their products. Cook at home, and then you will be confident in the quality of your food.

This recipe will allow you to prepare not just delicious herring, but rolls based on it. It's very simple, you just need to wait a little.

First, buy herring. Give preference to oceanic water - it contains fewer harmful substances. But sea fish will not be so safe. Take large herring with evenly colored scales. Wash the fish and remove the gills. The tastiest herring is salted whole. Boil 500-600 ml of water, dissolve 1 tablespoon of salt and sugar in it. Cool the brine to room temperature and pour it over the fish. After 2 days in the refrigerator, the herring will be ready.

Fillet the fish, removing all bones using tweezers. By the way, on an industrial scale, bones are removed using chemicals. It's safer to cook yourself! The peel is easily removed with a sharp knife. Place the fish on one layer of cling film and cover with a second layer. Gently pound the fillet with a kitchen hammer. The upper part of the film can be removed, because it was needed only to prevent pieces of fish from scattering to the sides.

To fill the rolls, mash with a fork processed cheese, adding to it one teaspoon each of sour cream and mayonnaise.

The filling is placed on the herring. You can add your favorite spices. Black pepper and coriander go well with herring.

You can add pickled peppers or cucumbers on top. Salted ones are also suitable. Add parsley, dill or green onions. This way the rolls will not only be tasty, but also very colorful.


All that remains is to roll the fish into a tight roll. Since the herring lies on the film, this is very easy to do. Now you need to leave the roll in the freezer for 1 hour.

Herring roll with vegetable filling- a wonderful appetizer for the holiday table. You can make sandwiches with this herring. You can also serve the roll simply sliced.

Ingredients (for 1 roll)

  • 1 herring fillet (2 halves)
  • 1 carrot
  • 1 egg
  • 1 fresh cucumber
  • several green onions
  • 0.5 tbsp. milk
  • 1/2 sachet instant gelatin

Preparation

  1. Boil and peel the carrots and eggs. Cut carrots and cucumber into small cubes. Grate the egg onto coarse grater. Green onions finely chop.
  2. Place 2 halves of herring fillets (back down) on cling film next to each other.
  3. Dissolve gelatin in half a glass of hot milk. The mixture must be stirred until the gelatin is completely dissolved.
  4. Pour milk and gelatin over the fillet (we will need a few tablespoons of the mixture).
  5. Place the filling (carrots, egg, cucumber and onion) on the fillet halves evenly over the entire surface. It is advisable to step back a couple of millimeters from the sides of the herring.
  6. Using cling film, carefully roll the roll into a tube, trying to adhere the edges of the halves (as we roll a roll).
  7. Place the roll directly into cling film in the refrigerator for several hours.
  8. Remove the film. Cut the roll into pieces.
  9. Serve sliced ​​or on slices of bread, garnished with herbs.
