Baking puff pastry from yeast puff pastry turns out airy. To prepare puff pastry dough, take following ingredients with photo:

  • Flour - 500 g
  • Dry instant yeast - 7 g
  • Milk - 1 glass
  • Butter – 250 g
  • Salt - a pinch
  • Sugar - 80 g
  • You can add a pinch of vanillin for scent


Having prepared all the ingredients, we begin to knead the dough.

  • Warm the milk a little, it should not be hot, add dry yeast to the warm milk and stir. Leave for the milk to cool and the yeast to develop.
  • Next, we begin to soften 50 g of butter, knead the butter with our hands. Rest butter set aside for later use.
  • Add softened butter to the milk with yeast and mix.
  • The flour must be sifted, preferably several times, and mixed with sugar and vanillin, if you decide to add it.
  • Pour the milk into a deep bowl in which you will knead, and add flour mixed with sugar and knead. It is preferable to knead with a mixer so as not to increase the temperature of the dough. It should not be too soft, but elastic so that it is easy to roll out.
  • We leave it for a while so that it rises a little, knead it again and put it in a cold place.
  • Cover the remaining butter with parchment paper on both sides and roll it out with a rolling pin, then also put it in a cold place, it should be at the same temperature.
  • When the dough has risen, you need to knead it again and roll it into a rectangular layer. We spread the cooled butter and cover it with the edges of the dough and roll it out again.
  • Place it in a cool place again for 20 minutes.

We repeat rolling and cooling two more times, after which we clean off any stuck flour. Our dough is ready, let's start cutting it into squares.


Next in preparing the puff pastry we will need raspberries for the filling. Raspberries can be fresh or frozen , you can try raspberry jam. We will need powdered sugar to prepare the filling (not needed if the raspberries are made from jam). You also need an egg yolk and a little milk for the coating mixture. In the center of the square we place raspberries mixed with powdered sugar, and collect the puff pastry into an envelope, pinching the edges.

Advice: you don’t have to wash the raspberries if they come from your own garden and are clean; if not, then you need to wash them in advance so that by the time they are laid out they have time to drain and be as dry as possible.

Ingredients:

  • Yeast-free puff pastry(ready-made, better homemade) – 400g
  • Fresh raspberries (frozen in winter) – 1.5 cups
  • Cottage cheese – 50g
  • Sour cream – 100g
  • Sugar – 2 tbsp.
  • Corn starch – 1 tbsp.

Exit: 4 puff pastries 150g each

My cooking method:

1. Place cottage cheese, sour cream, sugar, starch, a glass of raspberries into a blender bowl and mix everything until smooth, obtaining a cream filling for puff pastries.

2. Divide the puff pastry into 8 squares, place the prepared raspberry-curd filling on 4 of them.

3. Cover each square with filling with another and press them lightly, gluing the edges of the squares around the perimeter

5. We bring the free corners of the dough to the middle of the square, pressing them and getting something similar to a flower. We also fold the remaining corners inward, slightly rounding the product:
