Recipes for cherry pies: aspic and classic. Cherry pie with kefir Products for the pie

Home / Second courses

Cherry season has begun! And I suggest you open it by preparing a surprisingly simple and delicious pie with cherries on kefir! It looks like both a sponge cake and a cupcake. On a sponge cake - the splendor and airiness of a high cake layer; on a cake - higher humidity compared to a dryish sponge cake. The combination is amazing!

And the sour juicy berries that come across in the pie are a real “highlight”, or rather a cherry :) It is where the berries are found that the pie tastes best. Therefore, it is worth putting more of them. I added a little cherries, since the recipe was experimental - I was worried that berry juice The dough will get wet and it will not bake. But the pie baked perfectly. So next time you can add at least twice as many cherries.

By the way, such a kefir pie can be baked not only with cherries. It was originally a strawberry pie. And I liked it so much that I decided to try baking it with other berries, and at the same time double the portion into a mold with a diameter of 24 cm (the first time the mold was 20 cm). I was pleased with the result!

It's great to serve tea with tea in the summer so tender, lush and soft pie on kefir with cherries! The recipe will surprise you with its ease and simplicity. I also like the low oil content in the recipe (compared to our favorite “Cherry Wave”, which is an oil sponge cake. Here half of the oil is replaced by kefir. The cake is a little drier than with oil, but it is also more dietary. You can also replace kefir take low-fat sour cream).

Ingredients:

  • 400 g flour (3 cups, 1 cup 200 ml = 130 g flour);
  • 2 teaspoons baking powder;
  • 1/3 teaspoon of soda;
  • 1/3 teaspoon salt;
  • 250 g sugar;
  • Vanillin on the tip of a teaspoon;
  • 180 g chilled butter;
  • 200 ml kefir;
  • 2 medium eggs;
  • A glass of pitted cherries (fresh or frozen).

Not all ingredients have been doubled. I took less sugar and butter. If you like sweets or if the cherries are sour, you can increase the amount of sugar to 300 g. If you want it more rich creamy taste, take 200 g of butter.

How to bake:

Sift flour, baking powder, baking soda into a bowl - all together so that the flour and leavening agents mix together as well as possible. Add sugar, salt and vanillin. Cut the butter into the dry mixture into pieces - cooled, but not too hard.

And grind the contents of the bowl with your hands into crumbs. Then add eggs and kefir, mix, and the dough is ready! That's how quick and easy it is.

The dough turns out quite thick. We put it in a mold, cover it with oiled parchment, and level it with a spoon or spatula.

And place the cherries on the dough, pressing lightly. Frozen berries do not need to be thawed. Fresh ones should be lightly squeezed from the juice.

Place the cherry pie in the oven, preheated to 160-170C, and bake for about 1 hour. Depends on your oven exact time: maybe less - 45 minutes, and a little more than 1 hour 10 minutes. I have a gas oven with bottom heat, I place the pie on the middle shelf and a frying pan with water on the bottom, then the bottom crust doesn’t burn and the pie bakes evenly. It can be considered ready when the skewer comes out of the highest part of the cake without traces of dough, and its top becomes golden.

After cooling ready pie in the mold for 5-10 minutes, transfer it to a dish and shake powdered sugar.

Cut the kefir pie with cherries into portions and pour tea or cherry compote into cups!

Delicious!

Kefir, like most fermented milk products, is an excellent base for many types of dough. This drink contains many bacteria that create the necessary environment. When alkali (in the form of soda) enters this environment, a natural chemical reaction occurs. It is thanks to her that it turns out so loose and airy.

Many housewives have already acquired this useful gadget, and such recipes are gaining more and more popularity. Therefore, we will consider in detail how to cook with kefir (with a photo to make it clearer).

Ingredients required for preparation:

  • 2 eggs;
  • half a bag of vanillin;
  • 1 glass of kefir;
  • 250 g sugar;
  • 2 cups flour;
  • orange zest (optional);

Or you can get by with regular powdered sugar or condensed milk. After all, both the dough and the ripe, sour berries are delicious on their own, and their wonderful combination will not leave even the most demanding gourmet indifferent.

Cherries (can be frozen) - 200 g

Kefir - 1 tbsp. (200 ml)

Chicken egg - 3 pcs.

Flour - 1 tbsp. (200 ml)

Baking powder - 1.5 tsp.

Sugar - 1 tbsp. (200 ml)

Powdered sugar - optional

Butter - 1 tsp. for lubricating the mold

How to cook:

1. Set the oven temperature to 180 degrees and heat it up.

Pitted cherries must be placed in a sieve or colander; they will give a little juice, which should drain, this will prevent the pie from getting soggy.

Frozen cherries must be defrosted and the resulting juice must also be removed using a sieve.

2. Combine eggs and sugar in a bowl. If you scramble the eggs with a fork, the pie will be short after the oven, but if you spend a little more time on the process and beat until small bubbles form, the pie will be taller.

3. So, after mixing with a whisk, the eggs and sugar turned out to be a foamy, homogeneous mass.

Pour in kefir.

I made this pie with kefir with both 2.5% and 3.2% fat content. I didn’t notice much difference in the finished product. I think that even with 1% kefir the pie will turn out delicious, although I can’t say 100% sure.

Mix the kefir and egg mixture with the same whisk.

4. Combine flour and baking powder in a sieve. Sift into liquid mixture.

There is a nuance at this stage - the amount of flour will have to be slightly adjusted.

The recipe calls for 1 cup, which is 130 grams. But everyone’s flour is different, and if you also take into account the size of the eggs and the thickness of the kefir, then for the resulting too liquid mass you will need a little more of it.

The main guideline for the thickness of the dough will be its ability to fall from a spoon in a wide, heavy ribbon. You will get approximately a thick pancake batter.

That is, first you add the prescribed 1 cup of flour, mix well with a spoon, make sure that there are no lumps, and then take part of the dough into a spoon and observe - it flows quickly and the ribbon is thin, which means you add a spoonful of flour, knead and so on until will not look like the photo.

What will we get if we don't achieve the correct dough consistency? The cherries will sink into the batter and after the allotted baking time, you will have a fairly moist pie. And if you overly flour the dough, the cake will be too dry.

So follow the tips above and you will succeed.

But I want to immediately note that 1 cup of flour was always enough for me and there were no problems with the dough after the oven. Just in case, I’m giving you this hint so that there are no questions when executing the recipe. After all, we want to please our family with delicious baked goods.

If baking powder is not in the house, then it can be replaced with soda in the amount of 1 tsp. In this case, do not mix it with flour, but combine it with kefir. There is no need to extinguish the soda; kefir contains acid and upon contact with soda, small bubbles will appear in the fermented milk product.

This foamy kefir needs to be combined with beaten eggs, and then added sifted flour. Well, that seems to be all, the subtleties in preparing the dough are revealed, let's move on.

5. Grease the baking dish with butter, and to prevent the cake from sticking to the bottom, you can cover it with parchment paper.

You can take either a detachable or a solid form. The height of the pie will depend on its diameter. I think it’s clear that the smaller it is, the higher the baking will be. I use a baking dish with a diameter of 18 cm, and the height of the cake is 7 cm.

Pour the dough into the mold.

6. Arrange the cherries on top in a circle or just randomly. Those with a sweet tooth can sprinkle the cherries with sugar, 1-2 tablespoons. spoons.

While we were preparing the dough and peeling the cherries, the oven heated up to the desired temperature - 180 degrees.

7. Bake the pie with the oven door tightly closed for 40-45 minutes. Readiness can be determined by a dry splinter - it should easily come out of the middle of the pie and at the same time be dry.

Let the pie cool and dust with powdered sugar or leave the pie as is.

Set the oven temperature to 180 degrees and heat it up.

This simple cherry pie with kefir can be made with either fresh cherries or frozen ones.
Fresh ones need to be washed well and the seeds removed. This could be a special device for removing them or, like me, the old-fashioned method - a pin.

Frozen cherries must be defrosted and the resulting juice must also be removed using a sieve.
