The product is placed in a saucepan with water, vinegar, sugar and salt are added. Spices are at the discretion of the cook. Simmer for half an hour over low heat. The brine needs to be slightly salted - this is normal. Then the contents of the pan are cooled and transferred along with the brine into jars.
