Since then, in my family, I bake buns with poppy seeds for all holidays and got my family hooked on poppy seeds)). To make buns with poppy seeds we will need the following products:

Dissolve the yeast in warm milk, adding a little sugar.

As soon as the yeast begins to rise, pour it into the dough kneading container. Add the remaining ingredients, they should all be at room temperature. You can add a pinch of saffron or turmeric for color.

Sift flour with vanilla and knead into a smooth and soft dough. Knead until fluffy and sticky from your hands. To make the process easier, you can lubricate your hands with vegetable oil. This will take at least 10 minutes. Cover the dough and place in a warm place to rise.

Meanwhile, prepare the poppy seed filling. To do this, rinse the poppy seeds. If you have poppy seeds, then this step can be omitted. I have it by weight, from the market, and I always wash it. Pour water over poppy seeds and put on fire, bring to a boil, boil for 5 minutes, close tightly and leave to swell for 30-40 minutes. Then place the poppy seeds in a fine sieve and completely remove moisture. There will be more poppy.

Now you need to soften the poppy seeds so that they become fluffy and manageable. Previously, in the villages, they pounded it in a mortar for this purpose; later, in my childhood, they turned it at least 3 times in a mechanical meat grinder until it was completely ground. And now there are more advanced ways to soften poppy seeds - an immersion blender. Do not try to do this in a regular blender bowl or in an electric meat grinder - nothing will work... A coffee grinder or a blender-chopper like a coffee grinder will also work.

After grinding with an immersion blender, the poppy seed becomes like plasticine, soft and docile, light, it should hold the lump and not crumble.

Add sugar and mix well, leave until the sugar melts into the filling. No more extraneous additives - pure poppy. The color will turn black again.

The dough has risen and you can bake the buns.

Divide the dough into equal balls. I got 18 pieces, quite large.

Make a flat cake from the ball and put the filling on it.

Roll into a roll.

Pinch the edges, lift the ends of the roll up and connect.

  5. Mix flour with salt. Pour the yeast mixture into it. Knead the dough until smooth. If necessary, add more flour to it. The dough should be soft, but not sticky.
  6. Transfer it to a greased bowl. Cover it with a towel and leave in a warm place for an hour.
  7. Transfer the dough, which has tripled in size, onto a floured counter. Sweep it out again, “expelling” air bubbles with your hands.
  8. Form into a ball and place it back into the bowl. Cover the container with film and refrigerate for 3 hours.
  9. Prepare the filling. Melt the butter, add the ground poppy seeds into it and stir the mixture. Add honey and crushed nuts. Boil the mixture over low heat until thick. Cool the filling.
  10. Place the dough on the table and knead with your hands. Roll it into a rectangular layer with sides 30 by 50 cm and a thickness of 3 mm.
  11. Place the filling on the workpiece, not reaching the edges of the rectangle 2.5 cm.
  12. Roll the dough into a tight log. Pinch the resulting seam.
  13. Cut the roll into strips of 3 cm. Place the pieces on a baking sheet lined with baking paper, with the filling facing up, and give them a round shape. Let them sit until the volume doubles.
  14. Bake the buns at +180° for 20-25 minutes. Brush the pastry with beaten egg and return to the oven. Bake the pieces at +250° until golden brown.

  2. Warm water - 125 ml.

I add the flour last. I add it about 100 grams at a time and mix. By pouring it in gradually, it is most convenient to knead the dough.
