Pancakes are one of my family's favorite weekend breakfasts. I usually wake up first and, while my family is still stretching in bed, I prepare the dough for pancakes. And then, when I start baking pancakes, the delicious smell instantly gathers everyone at the table. Most often I make pancakes with apples - they turn out fluffy, very tasty and everyone in my household, without exception, likes them.

Ingredients:

  • 1 glass of sour milk;
  • 1.5 cups flour;
  • a pinch of salt;
  • 0.5 tsp soda;
  • 0.5 tbsp. vinegar;
  • 3 tablespoons sugar;
  • 1 medium sized apple;
  • 2-4 tablespoons of vegetable oil for frying.

Preparation:

In the bowl of a mixer (or food processor, or any bowl of a suitable size - if you prepare the dough by hand), mix room temperature sour milk with sugar. Add salt and soda slaked with vinegar. Mix again.

Add about half the flour. Mix well.

Then little by little, stirring all the time, add the remaining flour. The dough should be thick and not spread out under its own weight (a little thicker than usual for pancakes).

Wash the apples. Peel the apples, remove the core, cut into small cubes, approximately 3-4 mm x 1.5 cm in size. Add the apples to the dough and mix gently with a spoon.

Pour a little vegetable oil into the frying pan and heat it well. Spoon the dough into the pan using a tablespoon, forming round pancakes. Place the pancakes at a distance of 1-2 cm from each other so that they do not stick together during frying and are easy to turn over. Fry the pancakes over a little less than medium heat until a golden brown crust forms on the bottom (about 1.5 - 2 minutes).

Then carefully turn the pancakes over and fry on the other side. The fire should not be made too high so that the pancakes have time to bake inside.

Place the finished pancakes with apples on a dish or plate and serve immediately. These pancakes are good accompanied by sour cream, honey or your favorite jam.

The most delicious pancakes obtained from sour milk. If you have a glass of milk left that is not the freshest, put it in a warm place and when it is completely curdled, you will get a glass of thick sour milk, almost cottage cheese.
1. Pour sour milk (or kefir) into a bowl, add salt, baking soda (it will quench in sour milk), egg (beat it with a fork in a separate bowl), sugar and add flour little by little, stirring constantly. The dough should slide off the spoon with difficulty, so the amount of flour may vary.
Set aside the pancake batter in a warm place for 30 minutes.
2. Peel the apples, cut into small pieces (if desired, you can grate the apples coarse grater) sprinkle with cinnamon, mix, add them to the dough and, almost without stirring, start frying the pancakes.
3. Place the dough with apples in heated vegetable oil with a tablespoon, fry the pancakes over medium heat on both sides until golden brown. Serve pancakes with apples with sour cream or milk.

  • 500 ml sour milk;

  • 1 tsp. soda;

  • 1-2 tablespoons of vegetable oil for frying.

Preparation:

We take the sour milk out of the refrigerator in advance (a couple of hours beforehand) so that it comes to room temperature. Or gently heat it up (just don’t overheat it!) in the microwave.

Pour sour milk into the bowl of a mixer (or food processor). Add salt and sugar. We extinguish the soda with vinegar and add it to the rest of the products.

Gradually add flour, stirring the dough all the time with a mixer. It may take more or less flour - it depends on the thickness of the sour milk and the quality of the flour. Therefore, add flour little by little, stirring and checking the thickness of the resulting dough. The dough should be thick, a little thicker than for regular pancakes. We set the bowl aside, and we ourselves will prepare the apples.

Wash the apples and peel them. In delicate pancakes, pieces of the peel will be felt. You can only skip peeling the apples of the Antonovka variety - they are very soft.

Remove the core from the apples and cut them into small cubes (with a side of 3-5 mm).

Place the apples in the dough and mix with just a spoon.

Heat a frying pan well with vegetable oil. Place a tablespoon of pancakes in a frying pan and fry over medium heat until the bottom part is browned.

Then turn it over and fry the other half. Keep the heat low so that the pancakes have time to bake from the inside. Since the process of frying pancakes takes little time, do not leave the pancakes in the pan unattended for a long time so as not to burn.

Serve the pancakes hot - you can with sour cream, jam, or just like that.

4. Add soda. It will quench well in sour milk.


5. Add sifted flour little by little and mix everything well.


6. Mix all the ingredients into a thick dough similar in consistency to thick sour cream.


7. Wash the apples, remove the cores, peel and chop on a coarse grater if desired. Don't worry if the apples quickly darken - this will not affect the taste of the pancakes. Add grated apple to the dough.


8. In a well-heated frying pan, fry the pancakes, spooning the dough into the sizzling oil with a tablespoon. Brown on both sides and cover when flipping.
