home / Snacks

Pancakes are one of my family's favorite weekend breakfasts. I usually wake up first and, while my family is still stretching in bed, I prepare the dough for pancakes. And then, when I start baking pancakes, the delicious smell instantly gathers everyone at the table. Most often I make pancakes with apples - they turn out fluffy, very tasty and everyone in my household, without exception, likes them.

Want details? Read the recipe to the end, and also please your loved ones on Sunday morning with lush and delicious pancakes and apples on sour milk.

Ingredients:

  • 1 glass of sour milk;
  • 1.5 cups flour;
  • a pinch of salt;
  • 0.5 tsp soda;
  • 0.5 tbsp. vinegar;
  • 3 tablespoons sugar;
  • 1 medium sized apple;
  • 2-4 tablespoons vegetable oil for frying.

Preparation:

In the bowl of a mixer (or food processor, or any bowl of a suitable size - if you prepare the dough by hand), mix room temperature sour milk with sugar. Add salt and soda slaked with vinegar. Mix again.

Add about half the flour. Mix well.

Then little by little, stirring all the time, add the remaining flour. The dough should be thick and not spread out under its own weight (a little thicker than usual for pancakes).

Wash the apples. Peel the apples, remove the core, cut into small cubes, approximately 3-4 mm x 1.5 cm in size. Add the apples to the dough and mix gently with a spoon.

Pour a little vegetable oil into the frying pan and heat it well. Spoon the dough into the pan using a tablespoon, forming round pancakes. Place the pancakes at a distance of 1-2 cm from each other so that they do not stick together during frying and are easy to turn over. Fry the pancakes over a little less than medium heat until a golden brown crust forms on the bottom (about 1.5 - 2 minutes).

Then carefully turn the pancakes over and fry on the other side. The fire should not be made too high so that the pancakes have time to bake inside.

Place the finished pancakes with apples on a dish or plate and serve immediately. These pancakes are good accompanied by sour cream, honey or your favorite jam.

Tips and tricks:

I usually knead the dough with a mixer, but you can also use a whisk to make pancake dough, but it will take a little longer

1. Choose a convenient deep bowl in which to prepare the dough. Break the egg and add it to sleep granulated sugar. You can add a packet of vanilla sugar for flavor.

2. Beat the egg with sugar using a mixer. It is very important that the ingredients combine well and form an airy foam. This can guarantee that the pancakes will be fluffy. If you don’t have a mixer, beat it like my grandmother did, with a whisk or just a fork. The result will be the same, it will just take a little longer.

3. Pour in sour milk. After numerous experiments, I came to the conclusion that the most delicious pancakes are made from sour milk. For the dough it should not be cold. Room temperature or a little higher is what you need. Place the sour milk near the hot kettle to heat it up faster.
4. Add soda. It will quench well in sour milk.

5. Add sifted flour little by little and mix everything well.

6. Mix all the ingredients into a thick dough similar in consistency to thick sour cream.

7. Wash the apples, remove the cores, if desired, peel and chop into coarse grater. Don't worry if the apples quickly darken - this will not affect the taste of the pancakes. Add grated apple to the dough.

8. In a well-heated frying pan, fry the pancakes, spooning the dough into the sizzling oil with a tablespoon. Brown on both sides and cover when flipping.

9. Hot, airy, with a sweetish-sour note, sour milk pancakes with grated apple are ready! Help yourself and enjoy the taste familiar from childhood. Enjoy your tea!

A tasty and simple dish made from available products - apple pancakes cooked with sour milk, kefir or yogurt can be a wonderful breakfast or dinner. These fluffy pancakes cook quickly and can be a main course or dessert, especially if topped with a sweet topping such as jam or honey.

Ingredients

  • one glass of sour milk (maybe kefir, yogurt)
  • one and a half cups of flour (you can use less, but then the pancakes will be thin)
  • three tablespoons of sugar (this is on average, you can use one spoon more or less)
  • half a teaspoon of soda, which needs to be quenched with half a teaspoon of vinegar
  • a pinch of salt
  • one apple (you can take more - up to three)
  • three tablespoons of sunflower oil for frying.

Preparation

We prepare pancakes with sour milk and apples according to the following algorithm:

  1. Mix the sour milk in a deep bowl with sugar using a mixer, then add salt and add soda, which at this point needs to be quenched with vinegar, mix again.
  2. Add half the flour in small portions and stir.
  3. After thoroughly mixing, add the rest of the flour, also in small parts. We have obtained a thick dough; there is no need to be afraid of this density, since Apple juice will make it more liquid.
  4. We cut apples without skin and core into pieces measuring one and a half centimeters by three millimeters, although you can cut them into cubes or simply grate them on a coarse grater. If you grate, you need to be prepared that the apples will immediately release juice, which will burn when frying, so this is not the best solution. Mix the dough with apples.
  5. Place the pancakes in a frying pan and fry for two minutes on each side over medium heat so that they do not burn and are at the same time well-fried inside.

We serve with sour cream, honey, jam, but you can simply eat them, because they contain apples, which release juice and make the dish soft.

This is interesting

The benefits of apples are well known, but let’s list the properties again:

  1. The fruits contain vitamins C, B1, B2, P, E, as well as microelements - potassium (helps the heart function, stabilizes blood pressure), calcium (for teeth and bones), manganese, iron.
  2. They do not cause allergies and have virtually no contraindications.
  3. Fiber is not digested very quickly, so this low-calorie fruit satisfies hunger well. This property is used in diets, one of which is called apple diet. Only the apple diet should be used carefully, because a large amount of apple fiber can disrupt the functioning of the digestive system, and the acid can harm those who have gastritis or ulcers. Although sweet varieties do not increase acidity much.
  4. Pectin helps the skin look fresh.
  5. Baked apples help with digestion and even with such heat treatment remain healthy.
  6. Apples in small quantities can be eaten whole. But in large quantities, apple seeds can be harmful, as they contain a lot of iodine and hydrocyanic acid (potassium cyanide). Therefore, if you eat a lot of apples at the same time, throw away the cabbage.
  7. Apple peel has fibers that remove cholesterol from the body and cleanse the liver.
  8. Antioxidants slow down the growth of cancer cells, so apples are recommended to be used both for cancer prevention and during treatment. You just need to wash the apples well, as there may be chemicals on the peel that are used to treat the fruits so that they are stored better.

Apples winter well and remain fresh until spring without losing beneficial properties- This is another advantage of these juicy fruits.

How nice it is sometimes, when you have free time, to bake homemade pancakes for your family! For example, I really like to cook pancakes with sour milk. They always turn out tender and very tasty. But just pancakes are good, but pancakes with imagination are even better! It is enough to add fruits or other delicious additives to the pancake dough and the pancakes will acquire a completely new interesting taste!

Ingredients:

  • flour as needed to the desired consistency;
  • eggs 3 pieces;
  • sour milk approximately 200 ml;
  • sugar and salt to your taste;
  • vegetable oil;
  • apple 1-2 pieces;
  • prunes about 100 g.

Preparation procedure:

Wash the prunes well and soak them in warm water for about an hour.

Using a sharp knife, cut the prunes into small pieces.

Break 3 eggs into a large bowl, add salt and sugar.

Using a blender or just a spoon, beat the eggs with salt and sugar.

Sift flour through a sieve to help the dough rise better. At first, one or two glasses is enough, if the dough is a little liquid, then add more flour.

Wash the apples, cut out the centers and cut them into small pieces.

Add sifted flour, chopped prunes and apples to a bowl with beaten eggs.

Gradually pour the yogurt into the bowl, mixing all the products until you get a homogeneous dough.

Bring the dough to the consistency required for pancakes, adding sifted flour or yogurt if necessary.

Fry the pancakes by spooning portions of the dough onto a hot frying pan with vegetable oil.

When they brown on one side, turn them over to the other with a spatula.

You can serve ready-made pancakes with apples and prunes with sour cream.

As you can see, making sour milk pancakes with apples and prunes is very easy. Ruddy and appetizing, with a sweet and sour fruit flavor, your kids will definitely like them! Enjoy your meal!
