In season new potatoes I want to offer you this option for serving new potatoes with mushrooms. You can use absolutely any mushrooms; of course, the most aromatic ones will be wild ones. But in the absence of such, you can use champignons, as I did. The dish turns out tasty and satisfying.

Ingredients

To prepare new potatoes with mushrooms we will need:
1 kg of potatoes;
300 g champignons (or any other mushrooms);
1 onion;
2-3 cloves of garlic;
dill;
butter and vegetable oil for frying;

salt pepper.

Cooking steps

Peel young potatoes and boil until half cooked in salted water.

Fry the potatoes in butter on all sides until cooked.

Mix mushrooms and onions with finely chopped dill and squeezed garlic.

Add the mushrooms to the fried new potatoes and stir.

Serve with pickles or vegetable salads. Young potatoes with mushrooms are prepared very simply, and they make an excellent dish for the everyday table.

1. Wash the potatoes, peel them, cut into rings 3-5 mm thick.

2. Grease the baking tray vegetable oil. Place potato rings. Sprinkle salt, pepper, coriander on top (half of the planned portion of spices).

3. Peel the onion, cut into thin half rings, and spread evenly over the potatoes.

4. Place the washed mushrooms in a saucepan with water, bring to a boil and cook until done, skimming off the white foam. On average, fresh champignons are cooked for 10 minutes, honey mushrooms for 25 minutes, and porcini mushrooms for 35-40 minutes.

Pickled mushrooms spoil the taste, use only fresh ones!

5. Strain the mushrooms, cut large ones into pieces. Place on a baking sheet on top of the potatoes and onions. Add a second portion of salt, coriander and pepper.

6. Mix sour cream (mayonnaise) with water (150 ml). Pour the resulting sauce evenly over the potatoes and mushrooms so that the dish does not burn or become dry during baking.

7. Grate the cheese onto coarse grater, sprinkle potatoes.

8. Place the baking sheet in an oven preheated to 180-200°C, bake for 40-45 minutes, until a fork easily enters the potato layer.

9. Cool slightly, cut into pieces.


Potatoes baked in cream turn out incredibly juicy and tender. Our recipe used new potatoes, but you can also use regular ones; in any case, the dish will turn out incomparable. We offer you a recipe for young potatoes with mushrooms in the oven; the potatoes will be baked in cream under cheese crust. Ingredients

  • 1 kg of young (preferably medium-sized) potatoes;
  • 350 g champignons;
  • 300 ml drinking cream (10%);
  • garlic;
  • a small bunch of dill;
  • 150 g hard cheese;
  • salt and pepper;
  • sunflower oil for frying.

Preparation

Wash and peel young potatoes. Do not cut off the skin, but scrape it with a knife. In young potatoes it is very thin, so it can be easily removed. If you use thick-skinned potatoes, peel in the usual way. Cut the potato tubers either in half or into three parts. The slices should be large.


Fry young potatoes in refined oil. Set the heat to slightly above medium and do not cover with a lid. The potato pieces should be slightly browned.


Wash the champignons under running water, dry them to remove excess moisture and cut them either in half, or, if the mushrooms are large, into four pieces.


Fry the mushroom slices until lightly browned over medium heat.


Place fried new potatoes and rosy champignon slices in a heat-resistant dish. Salt and pepper. Drizzle cream on top. The level of cream should cover the potatoes approximately halfway. Place the mold at 180 degrees for about 30 minutes. You can take out the pan a couple of times and gently stir the potatoes so that the thickened cream is distributed evenly.


While the potatoes are baking, prepare the remaining ingredients. Finely chop the dill and garlic, and grate the cheese. The amount of garlic is from 2 to 4 cloves, it’s a matter of your taste.


After the allotted time, take out the mold and sprinkle the contents with garlic and dill. At this point the potatoes should be soft, but not dry. If dryness is observed, then add a little more cream.


Then spread the cheese and return the pan to the oven.


Wait 10-15 minutes, during which time the cheese should melt slightly, and take it out.


New potatoes baked in cream can be served as an independent dish. Thanks to the cream, the potatoes are especially tender and juicy. Of course, it should be served only hot, and this dish can be complemented with any salad.

    Cut small mushrooms into halves or quarters, cut large caps into slices, finely chop the stems.

    Pour oil into a baking tray with high sides, spreading it evenly over the entire area. Fill with potato wedges and mushrooms, add onions. Gently mix the ingredients, add spices, add salt and pepper, and mix again.

    Cover the baking sheet tightly with foil, place in the oven, bake for about half an hour at 220 °C. 5 - 7 minutes before the end of baking, remove the foil so that the potatoes acquire an appetizing rosy color. Place the hot dish on plates and sprinkle with chopped dill.

French potatoes with mushrooms and pork in the oven

With just three ingredients, adding cheese and sour cream, you get an excellent dish, an appetizing French delicacy.

Ingredients:

  • 1 kg of potatoes;
  • 2 onions (large);
  • 500 -- 600 grams of mushrooms;
  • 400 grams of sour cream;
  • 300 grams hard cheese;
  • Salt - to taste;
  • Black pepper - to taste;
  • 2 -- 3 tbsp. l. vegetable oil.

How to cook:

  1. Prepare the mushrooms, peel, rinse, dry, cut into thin slices.
  2. Peel the onions, cut into half rings or rings.
  3. Peel medium-sized tubers and cut into thin slices.
  4. Heat the oil in a frying pan and lightly fry the onion.
  5. Place the potatoes on a greased baking sheet, salt them, cover with a layer of mushrooms, pepper and salt again. Next add the onions.
  6. Stir non-acidic sour cream with salt and pepper and pour evenly on top. Cover the dish with a sheet of foil.
  7. Place the baking sheet in an oven preheated to approximately 180°C. Make sure that the top of the dish does not burn.
  8. After half an hour, check the readiness of the potatoes with a match or fork and if they are soft, sprinkle the top with cheese shavings. Bake until the cheese is browned for 5 - 7 minutes. After the time has passed, remove the baking sheet, cool, and serve with fresh seasonal vegetables as a side dish or an independent dish.

Potatoes in pots with meat and mushrooms

A wonderfully easy to prepare, versatile dish. You can cook with any meat and different types of mushrooms. It turns out aromatic and tasty; for young housewives this recipe is a true find. Various vegetables and spices will help diversify the taste.

  • 400 g meat (any);
  • 3 potato tubers;
  • 1 -- 2 pcs. fresh tomatoes;
  • 300 g mushrooms;
  • 1 onion;
  • 1 carrot root;
  • 12 pcs. prunes;
  • 30 ml vegetable oil;
  • Salt - to taste;
  • Spices - to taste.

Preparation:

  1. Peel and coarsely grate the carrots, finely chop the onion, and sauté in oil.
  2. Prepare the meat, peel, rinse, dry, cut into cubes approximately 2 cm in size. Arrange in equal portions in 4 pots, add 3 pieces to each. prunes

Ingredients: 420 g pork pulp, large onion, sour cream, 380 g mushrooms, 430 g potatoes, 160-170 g semi-hard or hard cheese, salt.
