Ingredients

  • 9 lasagne sheets (for standard lasagne pan)
  • 1 small eggplant, cut into slices
  • 1 small zucchini or green zucchini, cut into slices
  • 2-3 mozzarella ball
  • 150 grams semi-firm mozzarella, coarsely grated
  • 30 grams Parmesan or Grana Padano cheese, finely grated
  • Flour for rolling vegetables
  • Olive oil for frying vegetables
  • Salt to taste
  • Butter for greasing the mold.

For the basil béchamel sauce:

  • 50 grams of flour
  • 50 grams butter
  • 500 ml milk
  • 1 bunch of basil
  • 3 cloves garlic
  • Salt to taste

1) Preheat the oven to 180˚ C.

2) Heat oil in a large frying pan. Roll the eggplant and zucchini slices in flour and fry on both sides until cooked. Place on a plate lined with paper towel and add salt to taste.

3) Place 150 ml of milk, basil leaves and peeled garlic into a blender. Beat until smooth.

4) Heat the butter in a saucepan over medium heat. Add flour and fry, stirring, until the flour is golden.

5) Pour in the rest of the milk, bring to a boil, stirring constantly, and cook until the sauce thickens completely.

6) Pour in the milk whipped with garlic and basil. Add salt to taste and, stirring constantly, bring the bechamel sauce to a boil again. Remove from heat.

7) Assembly. Grease a lasagna pan with a thin layer of oil. Spread 1/4 of the sauce on the bottom of the pan and line the bottom with 3 lasagne sheets. Distribute the eggplant and zucchini slices equally on them, cover with 1/4 of the sauce, spread half of the soft mozzarella (in balls) on top, tearing the cheese with your hands, and sprinkle with 1/3 of the semi-hard mozzarella.

8) Cover with lasagna sheets and again, in the same order, lay out the remaining vegetables, 1/4 of the sauce, distribute the remaining soft mozzarella and sprinkle with 1/3 of the semi-hard mozzarella.

Eggs – 2 pieces (beat);

Ricotta (cheese) – 900 g (or fatty cottage cheese);

Mozzarella (regular – Una grande) – 230-250 g;

Parmesan (in the Reggiano-Parmigiano recipe) – 100-150 g (grate);

Parsley - a bunch;

Salt - 1 teaspoon;

Ground black and cayenne pepper - a generous pinch each.

Lasagna (sheets or lasagna noodles as in the video) – 500 g;

Mozzarella – 200-250 g (tear into small pieces);

Parmesan (or other hard cheese) – 100-150 g.

How to replace cheese in lasagna (with another cheese)

Ricotta can be replaced with full-fat cottage cheese or creamy (yogurt) curd cheese (like Almette).

Parmesan - any hard cheese with a pleasantly pungent smell (or just hard cheese that you have in the house).

Instead of mozzarella you can use Adyghe cheese either Suluguni or a mixture of Adyghe and Suluguni.

The Greeks generally suggest replacing these 3 types of cheese in lasagna with a mixture of 2 cheeses: feta and halloumi (just the total mass of cheese should be at least 1-1.2 kg, otherwise it will not be enough for the filling). Add tomato puree and about 1 cup of water ( or 1.5 – if no wine was added). Let the meat sauce simmer over low heat for about 30 minutes. Stir occasionally and keep an eye on the sauce so it doesn't burn.

Prepare the creamy cheese sauce for lasagna
