Beef liver pancakes: favorite recipe

For liver pancakes, a frozen product will do, but it must be fresh. It’s better to take it from a trusted place so as not to run into second-fresh liver, like sturgeon in “The Master and Margarita” by M. Bulgakov.

The flour that is available will do. You don’t have to add soda, but it will make the liver pancakes even more tender.

Ingredients

  • Raw beef liver – 0.5 kg;
  • Chicken egg (medium) – 2 pcs.;
  • Flour – 2 tbsp;
  • Raw semolina – 2 tbsp;
  • Large onion – 1 pc.;
  • Baking soda – 0.5 tsp;
  • Powdered black pepper – 0.5 tsp;
  • Sunflower oil – about 50 ml.

  1. Fill the best offal chosen at the market or in a store with slightly sweetened and salted water and leave for about half an hour. During this time, the bitterness will go away and the liver will be cleared of blood.
  2. We take it out, wash it thoroughly and remove the hymen.
  3. Dividing it into small pieces, using a meat grinder, food processor or chopper, we turn the liver into a homogeneous porridge-like mass. Along with it, it is advisable to grind the juicy pieces of peeled and cut onions.
  4. Add raw eggs to the liquid liver mince (no need to separate the yolks), flour, baking soda, semolina, stir until smooth.
  5. You need to let the mixture sit so that the semolina grains can swell. Then all that remains is to add salt and spice it up with pepper.
  6. It is better to take a frying pan with a thick bottom - it heats up well and retains heat longer. Having warmed it up, pour in the oil and after a couple of seconds, use a spoon to lay out the raw liver cakes.

The pancakes are baked until browned on both sides - literally 1-2 minutes. Even if the middle is pinkish, we still remove them - they will come out as they cool. A particularly tasty side dish for this rustic meal is potato tuber puree or vinaigrette. You can also put them on bread - you’ll get a hearty sandwich for tea.

Baking homemade pancakes with beef liver

Liver can not only be a “salt” dish, but also become a filling for pancakes. Before wrapping it in a thin layer of baked dough, it needs to be boiled and turned into minced meat using a meat grinder. First, let's make pancakes: combine flour, half the salt, sugar, and whisk eggs and milk separately.

Having combined everything together, stir until smooth so as to separate all the flour lumps. While the pancake mixture reaches its proper condition within half an hour, let’s devote time to the filling.

  • In the same way as in the first case, we wash and clean a piece of liver. Next, you need to divide it into 5-6 equal parts, fill it with water and put it on the fire. Once it boils, reduce the heat to low and cook for about 20 minutes until soft. 5-10 minutes before the end of cooking, add salt to the broth, add a bay leaf and a couple of peppercorns.
  • When the offal is ready (it becomes soft), remove it from the broth and grind it in a meat grinder.
  • In a frying pan, simmer peeled and well-chopped onions until transparent, add to the liver along with oil (2 tbsp).

Pour the remaining oil into the “rested” pancake dough. On a heated pancake maker (if you don’t have one, use a frying pan) we bake pancakes, greasing the bottom only under the first one. Fill the finished flatbreads with minced liver and roll them into envelopes.

Homemade pancakes with boiled beef liver are good with sour cream or mayonnaise sauce. Before serving, envelopes with delicious and hearty filling It would be nice to brown it in a frying pan. It will turn out very satisfying and appetizing!

For the cheese filling:

  • Processed cheese – 3 pcs.,
  • Garlic - a couple of cloves,
  • Mayonnaise – 70-100 gr.

Season with salt and a pinch of black pepper. After this, mix all the ingredients. Pour flour into the resulting liver mixture and knead it thoroughly again, breaking up large lumps of flour.

Pour oil into a frying pan and place it on the stove. Scoop out the liver dough and pour it into the pan. Immediately turn it in different directions to even out the dough and give the pancake a more or less even shape. Fry the liver pancakes over moderate heat on both sides.

Prepare the filling. Processed cheese grate on a medium or fine grater.

Place garlic, passed through a press, into a bowl with cheese.

Add mayonnaise.

If for some reason you don’t use it, replace it with unsweetened yogurt or sour cream. If desired, you can pepper the cheese mixture a little, and also add any fresh herbs to it. Mix the filling.

The cheese filling and liver pancakes are ready. Take a pancake. Place it on a plate or cutting board. Spread with cheese filling. Blacken with a tube.

Using this principle, make the rest of the liver pancake rolls. Place them in the refrigerator to cool. Serve the liver rolls with cheese filling by cutting each one slightly diagonally into equal parts. Bon appetit.

Liver pancakes are a tasty and satisfying hot dish that can be served either on their own or with any side dish of your choice. They go great with pasta, cereals, boiled, stewed and fresh vegetables. Today we will prepare tender chicken liver pancakes with the addition of hearts.

Before you start preparing minced meat for liver pancakes, it is important to properly process the offal. In particular, tender chicken liver must be stripped of veins. I know, I use it by many cooks chicken hearts entirely, but I always cut off all excess, and thoroughly wash them from the inside to remove blood clots.

  • chicken liver – 400 gr
  • chicken hearts – 200 gr
  • chicken eggs - 2 pcs
  • wheat flour - 50 gr
  • vegetable oil - 100 ml
  • table salt - 0.5 tsp.
  • ground black pepper - 1 pinch

To prepare tender, juicy and tasty liver pancakes, take chicken liver with hearts, chicken eggs, wheat flour (I use premium, but first grade will do), refined vegetable (I use sunflower) oil for frying, salt and ground black pepper to taste . By the way, if you wish, you can also add chopped onions, garlic, fresh or frozen herbs, and your favorite spices and spices to the dough.

First of all, be sure to process the by-products. For example, with chicken hearts, I always cut off the edge from the wider side (there are blood vessels and a lot of fat there).

After this, I cut each heart in half lengthwise and rinse thoroughly under cold running water. Most often there are dark blood clots inside! I know that many people cook whole chicken hearts, but in this regard I am quite squeamish.

Chicken liver can be cut into smaller pieces, removing the veins. We also wash the liver and allow excess liquid to drain.

You can grind by-products either using a meat grinder or in a food processor with a metal blade attachment. As you can see, the color of the liver and hearts differs from the photo above, but this is just a trick of light.

When crushed to a mushy consistency, the liver with hearts turns out to be quite liquid.

Mix everything thoroughly and you can immediately fry the liver pancakes.

To do this, take a wider frying pan, heat a little vegetable oil in it (then add as needed), add the dough (or minced meat - whatever you like to call this mass) with a tablespoon.

Cook over medium heat for about 2-3 minutes on one side, then flip the pancakes and cook the other side until cooked.

Transfer the finished liver pancakes with hearts to a plate and fry the next portion until the dough is finished.

Liver pancakes are a tasty and satisfying hot dish that can be served either on their own or with any side dish of your choice. They go well with pasta, cereals, boiled, stewed and fresh vegetables. Bon appetit, friends!

How to cook how to make liver pancakes recipe - a complete description of the preparation so that the dish turns out very tasty and original.

Making liver pancakes is not difficult. They are eaten on their own or filled with filling and rolled into rolls, and you can also use them to make a liver pie.

To prepare you will need 1 kg. liver, 3 raw eggs, sifted flour, 250-450 ml. milk, salt.

For the filling, carrots, onions, any mushrooms, eggs, boiled rice. All these components are mixed together, or in arbitrary variations, at your own discretion.

Take fresh liver and soak it for an hour and a half in milk at the rate of 1 liter. milk per 1 kg. liver. If desired, add 1 tsp to milk. salt. Soaking is necessary in order to draw out the bitterness and make the liver soft and tender. If you only have full-fat milk on hand, dilute it with boiled cold water approximately 1/1.

Place the soaked liver in a colander, remove skin, veins and tendons. Cut and grind in a blender or grind through a meat grinder. If you are preparing liver pancakes for a child or an elderly person, then first use a meat grinder and then a blender.

Beat the eggs until foamy and add the chopped liver to the paste. Add salt, pepper if you like spicy dishes, add half a glass of milk and mix thoroughly. Now enter 200 g. sifted flour and knead the dough, it should look like thick sour cream.

Next, adding milk in small portions, dilute the dough to a more liquid state so that it flows in a stream. Liver pancakes can be from 0.3 to 0.8 mm thick; if more, they will be difficult to bake; when turned over, they will break and become intractable for filling.

You should bake pancakes from the liver in the usual way. Heat a pancake pan, lightly grease it with oil and pour out the pancakes using a large ladle.

The first side is fried until the top of the pancake is completely cooked, there should be no stains left on it raw dough. Fry the second side for 15-25 seconds until lightly browned.

Grease the removed pancake with melted butter or spread the filling around the entire circumference and wrap it in a roll.

The vegetables for the filling are fried in butter, all separately. The onion can be chopped finely or into rings. Grate the carrots on a coarse grater or cut into thin strips. Boil eggs and rice. Finely chop the eggs.

Boil the mushrooms, then fry in creamy margarine or butter.

You can use other vegetables if they seem compatible with the liver. Liver pancakes will be very satisfying if you stuff them with meat filling.

You can eat liver pancakes, the recipe for which was given above, either cold or hot. Stuffed pancakes can be cut into 2-3 cm cubes and served as cold snack To festive table. As a decoration and to add brightness to the dish, finely chop the greens and sprinkle them on the rolls. Place them on the leaves of fresh watercress or Chinese cabbage, which can also be used as filling components.

They will go perfectly with butter or sour cream. Since this is a salty dish, it would be appropriate to serve them with some kind of sauce, including mayonnaise or ketchup. The most basic version of the sauce is adding garlic to mayonnaise or sour cream.

You can make liver pancakes layer cake. To do this, you need to transfer the pancakes among themselves with meat or any other filling, brush the top with an egg, lightly beaten with a fork, sprinkle with grated sharp or salty cheese and bake in the oven for 12-15 minutes.

You can make a pie without baking, if you don’t add any filling, just grease each pancake with mayonnaise seasoned with garlic and stack it on top of each other. Let stand in the refrigerator for about an hour and serve.

  • Raw beef liver – 0.5 kg;
  • Chicken egg (medium) – 2 pcs.;
  • Flour – 2 tbsp;
  • Raw semolina – 2 tbsp;
  • Large onion – 1 pc.;
  • Baking soda – 0.5 tsp;
  • Powdered black pepper – 0.5 tsp;
  • Sunflower oil – about 50 ml.

How to cook delicious beef liver pancakes

Beef liver pancakes: basic recipe

Before serving, it would be a good idea to brown the envelopes with tasty and satisfying filling in a frying pan. It will turn out very satisfying and appetizing!

Delicious pancakes with beef

Not all people are happy to eat dishes made from liver by-products. To please them, you can fill the pancakes with meat rather than liver filling.

  • Beef fillet – 0.5 kg;
  • Onion – 1 large;
  • Salt – 0.5 tsp;
  • Olive or sunflower oil – 3-4 tbsp;
  • Black pepper (ground) - to taste.

How to make your favorite beef pancakes

The meat of this variety is often too bloody. To solve the problem, you need to immerse it in water and leave it like that for about an hour. During this time, we will bake pancakes according to the proposed basic or other favorite recipe.

After washing the fillet, divide it into 4-5 pieces, immerse it in water and send it to the fire to cook until soft. It is advisable to pour out the first broth as soon as it boils. Return the meat to the pan, fill with water and cook over medium heat.

Grind the finished fillet in a meat grinder and combine with chopped onion and sautéed in oil. All that remains is to add salt to the filling, season it with pepper and fill the pancakes with it.

During the week, when there is a lot to do and there is no time to tinker in the kitchen for a long time, it is better to make the menu from simple, quick-to-ripe dishes. Homemade thin beef liver pancakes, the recipe for which was proposed, is one of these. And on the weekend, you can splurge on something more refined, for example, flatbreads with meat or your favorite sweet filling.

Liver pancakes with mayonnaise, a simple recipe

Since childhood, I simply adore liver cakes with various fillings, maybe because for some reason they were cooked very rarely at home. I tried it either while visiting or then traveling on trains. At the stations where they sell food there were simply amazing liver cakes, you take a piece and enjoy. Then they started selling this snack in supermarkets.

I’ve never cooked myself, I was scared to approach them, it seemed so difficult, here regular pancakes Sometimes they don’t work out, but what about liver ovens.

And then one day, when there was a liver in the refrigerator, a recipe for liver cake caught my eye. I read it, was inspired, realized that it was nothing complicated, I had a blender, and went to fry it.

I must say that I was surprised, this dish is so easy to prepare that it couldn’t be simpler. Liver pancakes are fried just perfectly! Nothing falls apart, does not tear, there is not much time for cooking, just have time to remove the pancakes from the pan and coat them with mayonnaise and filling.

I coated my first cake with the filling - grated carrots with garlic and mayonnaise. This time I decided to repeat the recipe and honestly was going to make a liver cake with the same carrot filling, but when I rushed in, there were no carrots in stock, and I had already ground the liver. Therefore, it was decided to do simple liver pancakes with garlic and mayonnaise .

It turned out delicious too, a great snack for a quick fix, the children grabbed both cheeks, although they usually do not eat liver in pieces with much pleasure.

Recipe for making liver pancakes

For this liver pancakes recipe I needed:

3-4 tablespoons of flour;

I cut the liver into pieces, soaked it in milk for an hour, then washed it well under cold water, put it in a bowl, added milk and eggs.

I ground the mixture in a blender, added flour, salt and pepper.

That's all the trouble, you get a thick mass that you need to scoop with a ladle and fry the liver pancakes on both sides.

They fry quickly and set up perfectly!

I immediately put the pancakes on a plate and coated them with mayonnaise and crushed garlic.

The result was a dish of fried liver pancakes with mayonnaise.

Everything is super tasty, but try adding grated onion and a couple of spoons of sour cream to the liver (for juiciness). I also add grated raw potatoes, or a spoonful of semolina - for splendor. I get fluffy liver pancakes, coat them with sour cream, garlic and herbs.

Ahhh, exactly, exactly, when I made the first cake in a blender along with the liver, I ground a head of onion, but this time I forgot! Thanks for the reminder, next time I definitely won’t forget, now the recipe will be at hand. I’ll definitely try to make it with potatoes and semolina according to your advice

You have a “Liver Cake”. I made liver pancakes differently. For 500 grams of liver, 1.5 glasses of milk, 3 eggs and ground onion in a blender. About 1 cup of flour, the mixture should be the same as if you were baking regular pancakes. The pancakes turn out thinner. Then I coated each pancake and rolled it into a tube. You can serve it with ketchup, depending on your preference.

It clearly doesn’t live up to the cake; it’s missing some interesting filling. I have thick pancakes, stacked, but not a cake :) Your idea of rolling them into tubes is also interesting. Then you can cut it into pieces - rolls, pin them with a skewer so that they don’t unravel and put something else inside - for beauty and it will be convenient to eat!

But that’s how cakes and pies are cut :) I love exactly this kind of cake, without filling.

I also call it liver cake. Only in the filling I put shabby boiled eggs with mayonnaise and herbs.

I showed my mom your recipe! So we're going to cook tomorrow :) I hope everything works out!

And yet, it’s very easy to make a “liver cake” out of all this deliciousness - decorate the top cake with finely chopped bell pepper, grated carrots or just herbs on a coarse grater.

When I make a cake like this, I always coat it with garlic, mayonnaise and fried onions and carrots. This is our family's favorite dish.

I just bake small liver pancakes like pancakes, because... My family doesn’t like liver either, but they gobble up pancakes, so now I’ll take note of your recipe. Thank you very much for the recipe.

I also often make these liver pancakes. But I also add onion and tomato chopped in a blender to the dough, and grease the layers homemade sour cream with garlic, so that it is less caloric, because when frying such pancakes absorb a lot of oil.

In this cake I make a filling of onions, carrots fried in vegetable oil and add thin slices of pickled cucumber.

You can try this: fry on one side, but keep it liquid on top. Place the filling of fried onions and carrots on top. Then fold it into a triangle right in the pan (like a pancake).

I really love liver pancakes and pancakes, but mayonnaise is quite harmful, I use cottage cheese dressing. I take soft fat-free or low-fat cottage cheese, salt it, finely chop it green onions, I mix. If it turns out thick, add a little kefir. I lubricate each layer - it turns out delicious!

I love this recipe. I just add finely grated onion to the liver and raw potatoes, also grated on a fine grater. I think it turns out even tastier! Hemoglobin raises perfectly.

And I use two types of layer - 1 mayonnaise with garlic, chopped herbs and very finely chopped bell pepper, and for the second layer - minced mushroom from fried mushrooms, carrots and onions. Goes with a bang)))

But for some reason my liver pancakes constantly fall apart. I'll use your recipe, maybe this time it will work.

My version of the layer is fried onions + sour cream. Apply coat and leave for several hours. Super!

Recipe description:
A dish like liver pancakes will be both an excellent snack and a complete lunch. At the same time, pancakes are very light on the stomach and easy to prepare.

Recipe ingredients

  • 500 g beef liver (you can use pork liver),
  • 1 large onion,
  • 3 eggs
  • 1.5 glasses of milk,
  • 200 g flour,

Liver pancakes recipe with photos step by step.

Cooking method:

Cut the liver and onion into pieces and pass through a meat grinder. Add eggs, milk, salt to taste, mix well.

Add flour and mix well so that there are no lumps.

Then add 3 tbsp. spoons of vegetable oil, mix with a spoon.

Pour a portion of dough into a hot frying pan (I have a frying pan with a diameter of 16 cm, I pour 1/2 a scoop of liver dough).
I grease the pan once, before frying the first pancake, then I fry the pancakes without greasing the pan.
Since we added vegetable oil to the dough, the pancakes do not stick to the pan.

Fry the pancake on both sides.

Place the pancakes in a stack, that is, on top of each other.

Mix mayonnaise with garlic, passed through a garlic press. Cover each pancake with mayonnaise.

Roll the pancake into a roll and press down lightly to prevent it from unrolling.

Serve pancakes with mayonnaise; you can also mix mayonnaise with ketchup.
