The sweet cake is left for 14 hours in enamel dishes, closing the lid, stir in raisins, 500 g, 2-3 tbsp. l. wine or apple cider vinegar and 10 g of pectin enzyme. Add 2 packs, 20 g, of wine (or baker's) yeast and leave in a cool room in a sealed container for a week, stirring 2-3 times a day. The liquid is filtered from the cake and filled with water - 6 liters. Place a glove on the bottle and leave it until it deflates. Then homemade pomegranate wine is clarified and poured into sterilized glass bottles, sealed with tight corks and left to infuse for at least six months. The product should be sampled and checked periodically. If it starts to sour, add sugar and let it ferment under a water seal. Then the processes of straining and bottling are repeated.   3. Israeli pomegranate wine recipe. Ripe fruits, 12 pieces, are processed using classical technology. Grate the zest from 2 oranges, then peel them, add 1 more orange, and squeeze out the juice. Before making wine from pomegranate, raisins, 400 g, are poured with hot water for 2-3 hours, and then drained in a colander and squeezed. The cake is placed in a container whose surface is not subject to corrosion, juice, raisins and 1.5 kg of sugar are added, and 4 liters of water are poured in. Let stand covered for 3 hours. Dilute with water 10 g wine yeast, pour into the container, mix everything and tighten, instead of a lid, with a layer of gauze. To make high-quality pomegranate wine at home, the wort is allowed to brew in a warm place for 4-5 days, until the surface becomes covered with foam.   4. Fortified pomegranate wine. Cake from 5 kg of fruits is prepared in the same way as in the recipes already described. Mix with sugar, 1.5 kg, leave for a day, stirring 2-3 times. Transfer to a prepared bottle, add 10 g of wine yeast, diluted with water according to the instructions on the package, pour in 6-7 liters of water, as well as 1 liter of alcohol. Put on a glove and place for fermentation in a warm place, 20-22°C. The bottle is large and has a narrow neck, so you have to shake it instead of stirring. To do this, pump the bottle several times a day. When the glove is deflated, the cake is filtered out, poured back into a clean glass container and put away, plugged with a tight stopper, in a cool room for 2-3 months. Homemade pomegranate wine is filtered again, completely getting rid of sediment, and bottled into sterilized bottles. They seal the neck and put it in the cellar to infuse.   5. Express recipe for dry pomegranate wine. In this case, it is better to use concentrated juice from the store or homemade juice prepared yourself. The cake will add unnecessary bitterness. Store-bought concentrate is diluted 1:1 with boiled chilled water, homemade concentrate - 1:0.5. Mix in sugar - 100 g per 1 liter of liquid, leave to infuse at room temperature in a bottle with a glove on the neck. There is no need to add any additional components when preparing pomegranate wine. The glove usually settles within 3-4 weeks. The fermented drink is filtered, poured into clean containers, sealed and infused at a temperature of 12-16°C for up to 3 months. Whether further aging is needed is determined experimentally after tasting.
  6. American Pomegranate Wine Recipe. To thicken the wort, barley grits are used - 225 g. It is washed, poured with 4 liters of water and boiled until tender. Peeled large juicy pomegranates (15 pieces) are crushed, and the cake is poured with chilled barley broth. Stir in 1.3 kg of sugar and the juice of 1 lemon. After the mixture has cooled, add 20 g of wine yeast, having previously dissolved it in water, according to the instructions. Everything is poured into a bottle and placed under a water seal. After the initial fermentation, the cake is squeezed out, the liquid is again placed in the bottle, a glove is put on the neck and left for a couple of months. As soon as a sediment forms, the intermediate raw material is filtered and poured into a clean bottle, again installing a water seal. Readiness is assessed not only by the condition of the glove, but also by the sediment. As soon as it ceases to form, it is filtered and poured into sterile containers. For aging, put in a cool place for 12-14 months.

Before making homemade wine from, you must thoroughly rinse the raw materials, sterilize the dishes and kitchen accessories. Even if the intermediate raw material is left to ferment in a warm place, in the sun, in order to speed up the cooking process, it must be covered with ironed gauze folded in several layers.

To do this, place 200 g of raisins, 400 ml of water and 50 g of sugar in a glass container, close and keep at room temperature for 3 days.

To obtain pomegranate juice, which we will use to make wine, we will have to painstakingly peel the fruit from the grains, which are then crushed in a wide container. Sugar, pre-prepared raisin starter or a pack of factory-made yeast are added to the juice. Mix everything until smooth and infuse the wine preparation, covered with malley, for 3 days in a cool place, stirring the wort once a day. After 3 days, filter the drink and squeeze it through cheesecloth, fill a glass bottle with it, add another 100 g of sugar and install a water seal on the vessel.

The wine should ferment in a dark place at a temperature of about 20 degrees Celsius for 3 weeks. You will need to stir the wine every 4 days; the absence of bubbles in the starter will indicate the completion of the fermentation process. After 3 weeks, the wine is filtered and hermetically sealed, while all containers must be filled to capacity to prevent air from penetrating inside. Then, to improve the taste, the wine must be kept for at least 4 months in a cool place, and the maximum shelf life of such a drink can be 2 years. By the way, experienced winemakers advise adding vodka to the wine (from 2 to 10%) if you want the drink to be fortified.

Preparation of medicine

The following recipe will help you prepare real medicine. It helps with stomach ulcers. As an independent remedy it does not bring results, but as an addition to medications it works well.

Ingredients for pomegranate peel tincture:

  • dry crusts;
  • chopped mint;
  • ginger powder;
  • large leaf green tea;

Preparation of tincture with pomegranate peels:

  1. All ingredients are mixed.
  2. Add a glass of water (1 glass of liquid per 1 teaspoon of mixture).

We will prepare the wine like this:

  1. We wash the fruits, clean them, crush the grains with a wooden masher. The result is approximately 2-2.5 liters of juice with pulp (about 1.5-2 liters of pure juice).
  2. We dilute the pomegranate mass with water, add some sugar (150 grams per 1 liter of juice) and yeast (according to the instructions).
  3. We tie the container with the wort with gauze and leave it for 3-4 days. During this time, the wort will begin to hiss and foam.
  4. On the 4-5th day, strain the wort, squeeze out the cake and add another part of sugar to the resulting liquid (100 grams per 1 liter of juice). Close the container with juice with a lid and install a water seal.
  5. After 4 days, open the fermentation container, pour about a liter of wort, in which we dissolve another part of the sugar (50 grams per 1 liter of juice). After this, pour the sweetened wort back into the fermentation container and leave for another 4 days.
  6. On the 5th day, add the rest of the sugar to the wort (50 grams per 1 liter of juice). We do this as in the previous stage, mixing sugar with a liter of poured wort.
  7. The fermentation course is usually completed after 35-50 days. If fermentation is not complete, the wine must be separated from the sediment and left to ferment.
  8. We separate the young wine from the layer of sediment at the bottom, and, if desired, sweeten or fortify with vodka. The volume of strong alcohol added to wine should not exceed 40-200 ml.
  9. We pour the wine into a bottle (jar) right up to the neck, seal it and keep it in the basement (cellar) for 4-6 months.
  10. We separate the finished pomegranate wine from the sediment collected at the bottom and seal it in glass bottles.

Preparing sourdough

Making wine begins with preparing the starter or purchasing wine yeast. Pomegranate seeds do not contain yeast cultures, so the fermentation process itself will not begin. To start and maintain the reaction, you can add purchased wine yeast or a pre-prepared starter to the wort.

Sourdough can be made from any unwashed fruit (cherries, raspberries, plums) or raisins, and its use will make it possible to activate the fermentation process. Moreover, it must be made 3-4 days before the start of making wine.

  1. Raisins or fruits are poured into a jar and added a small amount of sugar and 100–200 ml of water.
  2. After which all the components are thoroughly mixed, and the container is covered with a piece of gauze.
  3. It should be placed in a dark, warm place and left to infuse.
  4. After 3-4 days, when the starter is completely ready, you can begin processing the main ingredients.
Preparing the pomegranate
  • The fruits are washed and peeled, since pomegranate wine is made only from seeds.

  1. The future pomegranate wine is filtered through a sieve or several layers of gauze so that we get pure juice. In this case, the pulp is thoroughly squeezed out, and the liquid obtained from it is mixed with the juice.
  2. After 2-3 days, the remaining sugar is added to the fermented juice, after which the wort is thoroughly mixed and poured into a bottle, where the drink will play until it is completely ready. The container should be filled to no more than 75% of the total volume, otherwise carbon dioxide will not be able to fully escape, the bottle will burst and the wort will spill onto the floor.
  3. A shutter is installed on the neck, the second end of which is lowered into a jar of water or a medical glove is put on with a small hole pre-made in the finger.
  4. The bottle is moved to a dark, warm place where the drink will reach its condition.

When the fermentation process comes to an end, and this will happen no earlier than in 30–50 days, the young wine must be drained from the sediment. Determining its readiness is quite simple: the shutter will stop gurgling (the glove will fall), and the liquid will become much lighter.

The fermented wine is bottled using a small tube, which allows the light part to be separated from the sediment as accurately as possible. If desired, the finished drink can be made a little sweeter or stronger using vodka.
