ADVICE:

Do not fill the molds to the top with batter to prevent the muffins from sticking together.

  1. The peculiarity of preparing muffins of all types is that First all the dry ingredients are mixed, then all the liquid ones, then they are combined, and the resulting dough is poured into molds.
  2. Flour, sugar, vanillin and baking powder need to be mixed. Some recipes recommend using sugar instead of powdered sugar, and after mixing, sift the dry products again through a fine sieve. Practice has shown that muffins turn out well even without additional sifting.

The whiter the egg mass, the fluffier the dough will be, which means it will be filled with bubbles of beaten egg whites and sugar.


Then I add the melted butter, which has been left in the room for more than 2 hours, in medium pieces to the dough. The softened butter will be well beaten with a mixer and the dough will become homogeneous.


Now I pour milk (I don’t heat it for this recipe) at room temperature into the dough to make the dough more tasty. Milk fat It will also make baked goods softer. Beat all the ingredients again with a mixer.


I sprinkle the sifted air flour and add baking powder. Gradually knead the medium-thick dough, stirring with a spoon.


The last step is adding cocoa.


And finally I add some zest. There should be a lot of them. Everyone wants to get raisins, so I don’t feel sorry for them, I sprinkle in a few handfuls.


On silicone molds (I coat them lightly vegetable oil) pour the dough, it will be approximately like thick sour cream. I fill the molds ¾ full and they are now ready for baking.


I bake for 20-25 minutes so that the dessert becomes fluffy and properly browned. The top may crack slightly. This indicates that the muffins are baked and ready to be removed from the oven.

How to bake:

  • Melt the butter, heat the milk, mix, add the eggs and mix again. Combine dry products. Knead the dough.
  • Due to the increased volume of flour, the dough will be slightly thicker than in classic recipe. This is necessary so that the filling does not fall down. The secret of this product is that a little more than half of the portion of dough is poured into a baking container, then the filling is put in, and the rest of the portion is poured on top. Now about the liquid center.

Chocolate filling

  • If you want a completely liquid center, then you need to break the chocolate, put it in a thick plastic bag, add cream (1/4 of the volume of chocolate) and melt it in hot water. Do not boil: the bag may begin to melt. Cut off the tip of the bag and pour some chocolate onto the dough in the mold. The remaining glaze can be painted on ready-made baked goods patterns.

  • Cocoa powder - 50 g
  • Flour - 330 g
  • Baking powder - 1 tbsp. l.

  • Low-fat sour cream 15% (or natural yogurt) - 250 g
  • Eggs - 2 pieces (small) or one large

How to make chocolate muffins (step-by-step recipe with photos)

First, mix all the dry ingredients in a large convenient bowl: flour (330 g), quality cocoa powder (50 g), baking powder (1 tbsp), baking soda (1/2 tsp) and granulated sugar (180 g) .

Now mix all the ingredients with a mixer at the lowest speed or with a whisk.

In another cup, mash one large banana or two medium-sized ones. I mash it with a fork until it is almost liquid, you can cut it into pieces and turn the banana in a blender. If you don't get a homogeneous mixture, don't worry, everything will work out anyway.

Now beat two eggs into a bowl.

Heat the butter until liquid in the microwave or in a saucepan on the stove. Cool slightly so that it is not hot when you add it to the dough.

Add yogurt (250 g) to the liquid ingredients, as well as chopped chocolate. You can add finely crushed nuts, dried cherries and any other additives to your taste to this dough. You don't have to add anything.

Mix and combine with dry ingredients. Stir again until smooth.

The result is a thick dough that needs to be distributed into paper muffin capsules. If you use silicone molds, you can do without paper backings.

Attention! Do not fill the molds completely; the dough should occupy 3/4 of the volume of the mold.

It is convenient to use a pastry bag or an ice cream spoon for pipetting (this way an equal amount of dough gets into the molds and they turn out even and the same size). If you spoon out the dough using a regular spoon, choose one with the sharpest possible tip so that the dough hits the target.

Break the eggs into a bowl and stir with a mixer.
