Dear friends, if you, like me, have great respect and trepidation for breakfast, then you will certainly like my recipe today. It seems to me that how the day begins depends on how it goes, and therefore I always want it to start with a hearty, tasty and beautiful breakfast that will set the mood for all the events that will happen to you.

And yes, I understand that on weekdays you don’t really have time to invent something in the kitchen in the morning, but even simple scrambled eggs can be prepared to lick your fingers! Well, maybe I’m lying a little - not quite simple, but still not so complex, but very interesting.

I’m now talking about Georgian fried eggs – chirbuli. It is bright, juicy, appetizing and very, very tasty! Everyone in my family likes this breakfast; I sometimes cook it for friends who come to visit for a couple of days - and it always looks decent.

I won’t claim that my version is the most authentic Georgian-style scrambled eggs; I think this recipe is rather one of many ways to cook it. In addition to tomatoes, you can also add bell pepper, and eggplants... And you can’t count how many combinations you can prepare using different spices and seasonings... But I know one thing - using this recipe for Georgian fried eggs with tomatoes as a basis, you will create an excellent breakfast!

Ingredients:

  • 1 small onion;
  • vegetable oil;
  • 3 tsp with a heap of cornmeal;
  • 3-4 ripe juicy tomatoes or 200 grams of tomatoes in their own juice;
  • salt to taste;
  • spices to taste;
  • 1-2 cloves of garlic;
  • 3 eggs;
  • greens to taste.

How to cook fried eggs in Georgian style:

Finely chop the onion into cubes and sauté vegetable oil over low heat until transparent.

Add to onion cornmeal, mix.

Place the pan on low heat and cook for another 2-3 minutes.

Now it's time to add tomatoes. If you cook Georgian-style scrambled eggs in the summer, when the tomatoes are juicy and tasty, then use them. At other times of the year I recommend using.

Mix the onion with the tomatoes and simmer, covered, over low heat for about 5 minutes.

Add finely chopped garlic, salt and spices to taste. It could be a mixture of peppers, suneli hops and Svan salt - whatever you like best. It is thanks to the spices that Georgian fried eggs will turn out bright and very appetizing. Stir and cook for another 2-3 minutes.

Use a spatula to make small indentations in the tomato-onion mixture and crack the eggs into them. Try to do this carefully so that the yolk remains intact.

Cover the pan again with a lid and cook over low heat until the whites set. The ideal option is for the yolk to remain liquid.

Friends, today I prepared the dish “Georgian-style fried eggs”. In principle, I had cooked such scrambled eggs with tomatoes, onions and garlic before, but I didn’t know that this dish was called chirbuli or Georgian scrambled eggs.

How to cook scrambled eggs in Georgian style

Prepare the vegetables: finely chop the onion, garlic and tomatoes (give preference to juicy and fleshy specimens, which will release a lot of tomato juice when stewed).

Finely chop fresh herbs.

Melt butter in a frying pan, add onion. Onion lightly sauté in oil.

Then add chopped tomatoes, some parsley (optional) and garlic to the pan, salt and pepper, add khmeli-suneli seasoning.

Simmer the tomatoes with onions and garlic for about 7-10 minutes, the tomatoes should release their juice.

Break an egg into each cavity. Salt and pepper the eggs.

We continue to cook scrambled eggs under open lid. Ingredients:

    3 tomatoes

    3 eggs

    1 onion

    3 cloves garlic

    1 handful of walnuts (chopped)

    1 tbsp. butter

How to cook:

1. Heat the frying pan over high heat. Pour olive oil, and then add butter to it, let it melt. Now pre-fryfinely chopped onion until translucent and fragrant, then add tomato paste, garlic and chopped nuts. Fry for a couple of minutes. Stir constantly.

2. Now add the chopped tomatoes and peppers, previously cut into medium-sized cubes. Pepper, salt, add a little water and simmer over medium heat for 4-5 minutes. Don't forget to stir - the sauce should thicken a little.

4. Now cover the pan with a lid and reduce the heat to medium. At this time, the eggs are boiled. Important point! Only the white should set, the yolk just a little.

Before serving, sprinkle with herbs - you won’t regret it! Fragrant and incredibly tasty chirbuli is ready.

Let's start preparing chirbuli by preparing the ingredients. Peel the onion and garlic and chop them as desired. Chop the walnuts with a knife.

Then cut the tomatoes into cubes; there is no need to remove the insides, let the juice and seeds remain. We’ll also finely chop the hot red pepper, but here it’s purely based on your taste, my pepper was too hot, so I put a little bit of it in the scrambled eggs.

Heat the vegetable oil and butter in a frying pan, fry the chopped onion in it until transparent, do not fry!

Add tomato paste, garlic and nuts to the pan and continue frying, stirring constantly with a spoon, for another two minutes.

Then add tomatoes, water and salt to the pan. As soon as the mixture boils, reduce the heat and simmer for about five minutes, stirring occasionally.

Beat the eggs into the resulting sauce, first making a hole for each egg. The eggs should seem to drown in the sauce. Cover the pan with a lid, reduce the heat and let the eggs cook, but lightly, so that the whites turn white and the yolk remains runny.

Remove the chirbuli from the heat and sprinkle with chopped herbs. For chirbuli, we use a variety of greens and plenty of them; there must be cilantro, as well as parsley and green onions.

We immediately place hot Georgian scrambled eggs chirbuli in a frying pan on the table, serve bread with it so that it can be dipped in a thick and tasty sauce.

We continue to simmer it over low heat for about 7 minutes. Let's check the taste. If the tomatoes are too sour, add a pinch of sugar.

  • Let's prepare the walnuts. It is important that they do not become bitter - this will ruin the taste of the scrambled eggs. Grind a quarter cup until smooth (you can use a blender or do it by hand). Add the resulting substance to the frying pan along with spices and finely chopped garlic.

  • Let's move on to the most important part of cooking scrambled eggs. Using a spoon, make round holes in the tomato mixture (see photo) and carefully break the eggs into them. The yolk must remain intact.
  • Next, you can cover the chirbuli with a lid, but do not allow the yolks to become covered with a white film. The main highlight of the Georgian fried eggs recipe is the liquid, slightly runny yolk. The protein must be completely cooked. Bring the eggs to readiness.

  • The dish is served on the table directly in a frying pan and sprinkled a little with fresh fragrant herbs along with fresh bread or French roll.
