  • The products used to prepare buckwheat must be well prepared. The cereal must be carefully sorted and washed. Wash the liver, remove films and veins. Only after this can you start cooking directly.
  • Buckwheat for buckwheaters is boiled until cooked, and it should become completely soft and viscous.
  • The liver is used raw, turning it through a meat grinder in this form. Chopped liver is a rather liquid mass, so minced meat almost always needs to be thickened. This is easy to do with flour, but you shouldn’t sprinkle too much of it. As soon as the minced meat acquires the consistency of thick sour cream, you need to stop pouring flour into it.
  • Usually, in order to fry buckwheat, they are formed into cutlets and breaded in breadcrumbs or flour. In the case of preparing buckwheat with liver, the situation is different: the minced meat is placed in spoonfuls on a heated frying pan with boiling oil. You can turn the buckwheat cakes only after their bottom layer is well browned and covered with an appetizing crust. Then, when turning over, the top layer of minced meat will no longer spread.
  • You can add chopped onions, garlic, and carrots to the dough for buckwheat. In this case, they will be both tastier and healthier.
  • The buckwheat cakes are served without a side dish, but the sauce will not be superfluous. It can easily be replaced by regular sour cream, which is actually also a very healthy product.

    Grechaniki with beef liver

    • buckwheat- 150 g;
    • beef liver - 0.5 kg;
    • onions - 100 g;
    • carrots - 0.2 kg;
    • chicken egg - 1 pc.;
    • salt, pepper - to taste;
    • wheat flour, vegetable oil - how much will be needed.

    Cooking method:

    • Sort and rinse the buckwheat. Fill it with two glasses of water and put on fire. When the water boils, salt it. Turn down the heat. Cook the buckwheat until there is no water left in the pan. Turn down the heat even more and simmer buckwheat porridge another 10-15 minutes, making sure it doesn't burn. Remove from heat and let cool.
    • Rinse the liver. Remove films and veins. Cut the liver into medium-sized pieces. Scroll through a meat grinder, alternating with buckwheat. In this case, you need to use about half of the buckwheat; the rest should not be crushed.
    • Mix the minced meat with the remaining buckwheat, add spices, salt and egg, mix thoroughly.
    • Peel the onion and chop it finely.
    • Peel and wash the carrots. Blot it with a napkin and finely rub it.
    • Mix onions and carrots.
    • Heat the oil and fry the onions and carrots in it until golden brown. Add half to the minced meat, leave half to decorate the finished dish.
    • Mix the minced meat again. If its consistency is thinner than homemade sour cream, start adding flour to it little by little, mixing everything thoroughly each time.
    • When the minced meat has thickened sufficiently, heat a clean frying pan by pouring a sufficient amount of oil into it.
    • Spoon the minced meat into the boiling oil. When it is fried on one side to an appetizing crust, turn the buckwheat over to the other side and fry them for another one or two minutes. Place on a napkin to absorb excess fat, and in the meantime place a new batch of buckwheat pancakes in the pan.

    Serve buckwheat from beef liver best with sour cream. Place the remaining onions and carrots on top of the sour cream. If desired, sour cream can be mixed with them immediately.

    Buckwheat with pork liver is also prepared using the same recipe, but they will be a little more high in calories and a little less healthy.

    Chicken liver buckwheat

    • buckwheat - 0.3 kg;
    • chicken liver - 0.5 kg;
    • sour cream - 0.3 l;
    • onions - 0.3 kg;
    • carrots - 150 g;
    • vegetable oil - how much will be needed;
    • salt, ground black pepper - to taste;
    • wheat flour - how much will be needed.

    Cooking method:

    • Boil the washed and well-sorted buckwheat until tender.
    • Rinse your liver.
    • Peel the onion. Cut half of it into small cubes, cut the rest of the onion into large pieces.
    • Pass the liver and coarsely chopped onion through a meat grinder.
    • Mix minced liver with buckwheat.
    • Add half the sour cream, salt and pepper to the minced meat. Mix it well.
    • Thicken the minced meat with flour - the consistency should resemble very thick sour cream.
    • Heat vegetable oil in a frying pan. Place the dough in it and fry the buckwheat-liver pancakes on both sides until golden brown. Place it on a napkin and wait until the excess oil drains from the buckwheat mushrooms.
    • Peel the carrots and grate them coarsely.
    • Heat a small amount of oil in a clean frying pan. Place onions and carrots in it. Fry them over low heat until soft.
    • Mix the frying with the remaining sour cream.
    • Place half of the buckwheat on a plate. Lubricate them sour cream sauce, having spent about half.
    • Place a second layer of buckwheat pancakes on top of the buckwheat pancakes. Brush them with the remaining sour cream sauce.

Not long ago we were in a Ukrainian restaurant and saw on the menu interesting dish- Greeks. We didn’t order them there on purpose, but decided to cook them ourselves so that we could try them at home in a relaxed atmosphere.

Saturday morning began with a trip to the market for liver and fat mesh. We bought beef liver, and lamb fat mesh.

Now a little about the Greeks themselves. They are a well-fried “envelope” stuffed with buckwheat, liver and fried onions. Buckwheat and liver, as a rule, are a bit dry, but if they are wrapped in a fat mesh, these ingredients will become juicy and tender.

Grechaniki can be served as an independent dish, simply garnished with salad or vegetables. Here you have both meat and side dish :-) They can be prepared in advance, and just reheated before serving. We do not recommend eating buckwheat cold - after all, dishes using fat mesh taste better when eaten hot.

And if you make more filling, then you can add egg and flour to it and fry delicious liver pancakes with buckwheat. That's what we did. I could have posted the recipe, but I didn’t have time to take a photo - I ate it all right away :-)
