Although hedgehogs and meatballs are very similar to each other, we do not forget that these dishes are still different. Therefore, in this case, meat balls should not be fried, thereby depriving them of their very zest - protruding needles.

To make tomato sauce, you can use ground tomatoes, homemade juice, or tomato paste.

Required Ingredients:

  • 0.5 kg of minced meat;
  • ½ st. rice
  • 1 + 1 onion (for hedgehogs and for gravy);
  • 1 non-cold egg;
  • 3 tomatoes;
  • 1 medium carrot;
  • 1 tbsp flour;
  • salt, sugar, pepper, herbs.

Cooking steps:

  1. Boil rice until half cooked.
  2. To form “hedgehogs”, we take twisted meat, finely chopped onion, cooled rice, egg, add salt and pepper, mix thoroughly.
  3. We roll small koloboks from the resulting minced meat, which should be laid out on the bottom of a thick-walled stewpan or pan. There will be a lot of gravy, so whatever the chosen container, its sides should be high. Ideally, lay out all the meat koloboks in one layer, but if this does not work out, then it does not matter, we place them on the second floor.
  4. For gravy, fry grated carrots with chopped onions in a pan, when the frying is ready, add tomatoes puréed on a blender or pasta diluted in water. After a couple of minutes, we introduce flour, mix and continue to fry for about 30 seconds, pour in about 3 tbsp in a thin stream. boiling water, mix immediately, allowing the flour to disperse evenly, bring to a boil, continuing to stir.
  5. Add salt, dried herbs, spices and sugar to the gravy to your taste. The last ingredient is required, otherwise our sauce will lose a lot of taste.
  6. Pour the hedgehogs with sauce, simmer under the lid for up to half an hour.

Hedgehogs in a slow cooker - recipe

Required Ingredients:

  • 0.5 kg headlight;
  • 1 carrot;
  • 1 onion;
  • 1 Bulgarian pepper;
  • half a multicooker measuring cup of rice;
  • 40 ml of tomato paste;
  • 2 tbsp. l. flour;
  • 100 g sour cream;
  • salt, spices, herbs.

Cooking steps hedgehogs in a slow cooker:

  1. We prepare cleanly washed and peeled vegetables: we rub the carrots on a medium grater, finely chop the onion, cut the pepper into thin strips.
  2. We diligently and tastefully beat the minced meat on the table for a couple of minutes, add half the prepared onion, rice, spices to it.
  3. We pass the remaining vegetables on the "Baking" for about a quarter of an hour.
  4. While the vegetables are cooking in a slow cooker, mix sour cream with tomato and flour, pour 400 ml of boiling water into them, stir until smooth.
  5. We put rice and meat balls on the vegetables, pour the resulting sauce and cook on the “Stew” for 1.5 hours.

  • 2 garlic cloves;

Cooking order hedgehogs in a pan:

  1. Grind peeled carrots, garlic cloves and onions in a blender or by hand.
  2. Finely chop the greens (dill, parsley), you can add basil to give the dish a Mediterranean touch.
  3. Mix minced meat with vegetables, add raw or semi-cooked rice, greens and an egg. Mix, add and pepper. The resulting mass should be homogeneous, thoroughly mixed, soft.
  4. We sculpt neat koloboks, roll them in flour to give an appetizing crust.
  5. Fry the meatballs in oil on all sides. Our hedgehogs are ready! Sauce can be prepared upon request.
  6. Mixing sour cream, preferably homemade, tomato leaves, a little salt and hot water, mix.
  7. Pour the gravy to our "hedgehogs", simmer until the sauce thickens over low heat. Usually this action takes no more than half an hour.

Hedgehogs - cooking recipe in a saucepan

This recipe is dedicated to all connoisseurs of simple, but very tasty and satisfying dishes.

For its preparation necessary:

  • 0.9 kg of minced meat;
  • 100 g of rice;
  • 1 onion;
  • ½ st. homemade cream4
  • 2 tbsp. milk;
  • 100 g butter
  • 2 garlic cloves;
  • 2 yolks.

Cooking steps:

  1. We rub the peeled onion on a coarse grater or pass it through a blender.
  2. Mix the minced meat with rice and onions until smooth.
  3. From the rice-meat mass we form koloboks 5 cm in diameter.
  4. We put a small piece of butter on the bottom of a thick-walled pan, after it has dispersed, put the meat balls on top, fill them halfway with water, cover with a lid and bring to a boil. After that, the fire can be reduced to a minimum. The total quenching time is about 45 minutes, while the "hedgehogs" should be periodically turned.
  5. Cooking cream sauce in a small saucepan. At its bottom, melt 50 g of butter, fry chopped garlic on it, after a minute add cream, and after a couple more - milk. We do not bring the mixture to a boil, simmer over low heat for about 5 minutes.
  6. Beat the yolks thoroughly, pour in the sauces for the future, continue to simmer for another 10 minutes. The main thing is not to bring to a boil! We add to taste.
  7. Remove the prepared meat balls from the heat, pour the sauce and let it brew.

Hedgehogs in sour cream sauce

Required Ingredients:

  • 0.5 kg of minced meat:
  • 0.1 kg rice;
  • 1 egg;
  • 1 carrot;
  • 1 onion;
  • 100 g of oil;
  • greens, salt, pepper;
  • 50 ml of tomato sauce;
  • 200 g sour cream;
  • 0.5 l low-fat broth;
  • 1 tbsp in / with flour.

Try to make your own minced meat. If you take a store-bought, give preference to a chilled product, and not from a deep freeze. We recommend that you pass the purchased minced meat through a meat grinder again, otherwise large pieces may come across.

If you moisten your hands in cool water before starting to form the "hedgehogs", then the minced meat will not stick to your palms.

Steamed hedgehogs are a dietary version of your favorite dish. After readiness, they can be poured with low-fat sour cream diluted in water and simmered for about 5 minutes.

To cook meat “hedgehogs” with rice in a pan, first we wash the cereal in several waters: each subsequent portion of water should be warmer than the previous one, the last one should be almost hot. Then fill it with water two fingers above the cereal and leave to swell.


Meanwhile, peel and finely chop the onion. In order not to cry, you can slightly open your mouth and breathe through it, and not through your nose - it helps a lot! Lightly fry the onion in a pan with vegetable oil.


We clean, wash and grate the carrots, put them in a frying pan and fry in vegetable (or butter) oil until half cooked.


We twist the meat in a meat grinder. Which meat is best? Better take a mix different types: pork, beef, poultry - it will turn out much tastier. We form balls with a diameter of 5 centimeters. It will turn out better if you periodically moisten your hands in cold water.


We lightly fry our "hedgehogs" in a fairly well-heated pan in vegetable oil on all sides. If you want more diet dish, then hedgehogs can not be fried.


Pour the prepared sauce over the hedgehogs. Heat over high heat until boiling, then reduce the heat. You can add fresh tomatoes or 2 tbsp to the sauce. tomato paste.

Nevertheless, minced hedgehogs with rice are still better to pre-fry, so that later they do not fall apart during stewing. It is inconvenient to do this in a saucepan, especially if the amount is large. You need to fry them in one layer, so with a large number of blanks we will fry them in batches. How to cook minced hedgehogs with rice and gravy in a saucepan

Stuffing for hedgehogs. As for minced meat, it can be different. Depends on your preference and product availability. I have completely ground pork. Chicken, turkey, pork and beef are excellent. Use one only Ground beef I usually do not advise, it is dry, crumbly, products from it do not hold their shape well and can easily fall apart. I never add an egg for gluing, the balls turn out perfectly without it.

Rice. You can use whatever you have on hand. It can be pre-boiled until cooked or half cooked in salted water, then cool a little and mix with minced meat. You can also put raw rice, but then the cooking time is significantly extended, the minced meat will be ready for a long time, while the rice will still be raw.

Vegetables. They are best added to red gravy. It can be tomatoes, carrots, onions, celery stalk, zucchini.

Spices. Do not avoid spices and spices, they go very well with both gravy and meat. The only thing to consider is that some spices are good in tomato sauce, while others are better in sour cream or cream:

  1. for tomato it is better to take: black and red pepper, marjoram, thyme, oregano, cumin, Bay leaf, paprika;
  2. for sour cream or cream: white pepper, nutmeg, basil, garlic.

In order not to be mistaken, it is better to use ready-made sets and put spices a little bit at a time.

How to get a thick rich gravy. Usually starch or flour is used for thickening. If you have added vegetables, then you do not need to thicken the sauce. The vegetables will blend and thicken the gravy without the aid of anything. Without vegetables, it is better to add, as I said, ordinary flour or starch, it can be potato or corn. It is better to mix the flour together with tomato paste or sour cream, then dilute with slightly warm water and pour into the pan at the beginning of the cooking process. Starch is diluted with cold water separately and poured in at the end of the stew, after boiling the sauce again, it will make it thick.

Side dishes. Most garnishes will go with hedgehogs, except for rice, of course, since it is already inside. And so: potatoes in any form, vegetable salad, cereals, pasta, etc.

Below I will show how to cook hedgehogs from scratch, i.e. with minced meat, because homemade is always better for a delicious dish than store bought. The gravy will be with tomato and vegetables.

Ingredients:

  • meat (pork) for minced meat - 0.5 kg;
  • raw rice - 100g;
  • onions - 1-2 pieces;
  • carrots - 1 pc;
  • onion for gravy - 1 pc;
  • tomatoes - 1-2pcs;
  • garlic - 1 clove;
  • tomato paste - 1 tsp;
  • spices for meat - 0.5 tsp;
  • salt - 1.5 tsp;
  • vegetable oil - 50 ml;
  • water - 500 ml.

How to cook minced hedgehogs with rice in a tomato-vegetable sauce in a saucepan

  1. Let's start with cooking homemade minced meat. Peel the onion, chop large pieces, of such a size that they pass into the feed opening of the meat grinder.
  2. Rinse the meat under cool water, cut off all the excess and cut into pieces.
  3. We scroll through a meat grinder, alternating pork and onions.
  4. Be sure to knead the minced meat well with your hands to mix the pork and onions. It will not only give the hedgehogs a taste, but also make them juicier.
  5. If you have minced meat ready and there is no onion in it, then it is better to additionally either scroll it into the meat in a meat grinder, or chop it very finely with a knife. Excellent, by the way, the blender chopper bowl copes.
  6. Rice is poured with water. It should cover the grits by about 2 fingers, but in this case more is possible, then salt. We throw 0.5 tsp into the water. salt, wait for it to boil, then reduce the heat to a minimum. We cook for 20 minutes. Then we recline it in a colander to drain the water and let it cool slightly. Mix the cooled rice with minced meat.
  7. We put half a teaspoon of salt and spices. Roll the balls from the resulting mixture. You should get 10-12 hedgehogs. While we put them on a cutting board to start preparing the ingredients for the gravy.
  8. We clean the carrots, wash and rub on a coarse grater. Remove the husk from the onion, cut it with a knife into large cubes. My tomato and cut into pieces. Peel the garlic and finely chop with a knife.
  9. Pour vegetable oil into a frying pan, put on a large fire, warm it up well. We lay out the blanks. If they do not fit, we will fry in several steps.
  10. They should lie freely in the pan so that they can be turned from side to side without damage.
  11. When the hedgehogs are fried on all sides, we transfer them to the pan. And in the same pan (no need to wash it), put the vegetables.

  12. Stirring frequently, cook for about 10 minutes until soft, add another half teaspoon of salt and tomato paste. Reduce the heat to medium and let them simmer for a couple more minutes.

  13. While the vegetables are cooking, turn on the kettle. We will need boiling water.
  14. We shift the vegetables into a saucepan with hedgehogs.
  15. Pour in boiled water. Stir, cover with a lid and simmer on moderate heat for 30 minutes. Don't forget to stir occasionally. Our hedgehogs were previously fried, so now they already retain their shape well. The rice has been boiled, and therefore it will not delay us now. Half an hour is enough for the minced meat to cook, the vegetables to stew, become soft and, together with water, tomato and spices from the meat, form a delicious, thick gravy.

Everything can be served at the table.


By the same principle, hedgehogs can be made in a saucepan and in other sauces or gravies. I will no longer focus on the hedgehogs themselves and will only give you a few sauce recipes for them.

Sour cream sauce for minced hedgehogs with rice, which will be stewed in a saucepan


It is better to take low-fat sour cream, 10-15%, since more oily does not give a smooth gravy and can turn into lumps, which is not at all beautiful.

What do we need for the sauce:

  • sour cream - 200g;
  • white pepper - a pinch;
  • flour - 1 tablespoon;
  • water - 1 glass;
  • salt - 0.5 tsp
  • hedgehogs with rice (see above).

How to make sour cream sauce for hedgehogs

  1. Transfer the sour cream to a bowl large enough to hold 1 cup of water later.
  2. Add salt, pepper and flour. Mix until smooth.
  3. Pour warm boiled water. By no means hot! From it, the flour will turn into a paste, and the sour cream will curdle. Cold is also better not to pour, it will increase the cooking time.
  4. Pour the mixture into the pan with the already fried hedgehogs. Simmer over low heat until cooked through, stirring often so the gravy does not burn to the bottom of the pan.

Hedgehogs with rice in a saucepan in bechamel sauce


Bechamel - thick milk sauce. It will wrap the meat balls around and they will turn out very tender. Perfect with minced chicken hedgehogs. The preparation of such gravy requires some skills, so if you are a novice cook, first carefully familiarize yourself with the preparation process, and then follow it step by step.

  • milk - 0.5 l;
  • butter - 50g;
  • flour - 50g;

How to make béchamel sauce for rice hedgehogs

  • Sweet pepper - 1/2 pc.
  • Tomato paste - 200 gr.
  • Paprika - 1 tsp
  • Dried garlic - 1 tsp
  • Salt - 1 incomplete tbsp. l.
  • Sugar - 1 tbsp. l.
  • Boiling water - about 1 liter.
  • Bay leaf - 2 pcs.

I think that many people have known and loved this dish since childhood. And so it is always called “hedgehogs”, because the boiled rice in these essentially resembles the thorns of a hedgehog.

The dish itself turns out to be very satisfying, suitable for any side dish - pasta, buckwheat, potatoes, etc., and the amazing gravy makes it even tastier and richer. Let's cook!

I take minced meat. I have beef half and half with pork, it is not too fatty, it is scrolled in the middle cell of the meat grinder. Minced meat needs to be salted to taste, pour a spoonful of a mixture of peppers and a couple of tablespoons of meat seasoning into it (I took suneli hops today, this seasoning is also great). Mix well.

Rice should be rinsed well in advance through a colander and let all the water drain. By quantity: I take rice a little less than 1/4 of the weight of minced meat, it seems to me that this is the optimal proportion.

We mix. At first it may seem that there is not enough rice, it is hard to see it, but then, when it boils it will be fine, now you will see.

We roll rounded meatballs from minced meat. Children love to participate in this process. My son helped me, in the very middle of his masterpieces. 😀

In order for the hedgehogs to keep their shape well, take a portion of minced meat in your hand, transfer it from palm to palm several times so that the mass is compacted and air comes out of it. And only then roll the ball.

The size is not too small - about 4-5 cm in diameter. Keep in mind that they will get bigger as the rice fluffs up as they cook.

We put the finished hedgehogs in the refrigerator for now, and we will prepare the gravy.

Take a medium onion and chop it not too finely.

I have a big carrot. If you have a small one, then take a few pieces. We rub it on a coarse grater.

And I also have sweet peppers, thin-walled, light yellow, and at the same time very fragrant. I cut it into thin strips. When the gravy is ready, it will not be visible in it at all, but it will give its taste and aroma.

We take vegetables and place them in a pan with a small amount of vegetable oil. Saute for a couple of minutes over medium heat, avoiding frying.

Spread the tomato paste over the vegetables. Stir and fry everything together for a couple more minutes.

I do not recommend replacing pasta with ketchup, because ketchup is often very sour. Although, this is of course up to your taste.

The only thing is that it is not convenient to clean it, especially when it is still hot, only from the pan.

Then, in order not to burn my fingers and not bother with cleaning, I came up with a little life hack: I prick potatoes in their jackets on a fork and carefully peel them with a knife. This happens quickly and you barely touch the hot potato during the peeling process.

When my friend saw my way, she had such a surprised face, as if I had discovered America. It turns out that few people think of somehow facilitating the cleaning process. hot potato. Maybe you will need such an idea, it would seem a trifle, but it is useful to know.

Well, I peeled the potatoes, cut them into slices, without even touching them with my hands. Added salt, butter and dill. Usually I cook potatoes this way for country gatherings, but today I wanted something just like that.
