I was not going to publish the recipe for my version of herring under a fur coat, because everyone makes this dish in their own way, and because there are no particular difficulties in preparing this gluten-free dish, you just need to make sure that the mayonnaise and herring marinade used do not contain gluten. We have never made herring under a fur coat at home, and the first time I cooked it was only in Australia several years ago, when we were given a jar of spicy-salted Latvian herring that came from nowhere. Maybe because I have never eaten this dish, I never liked it, but my husband loves it, and that’s why I always make it for Christmas and other holidays. The main difficulty is finding and buying the right herring. It should be salted, and not pickled with vinegar, like almost all versions of canned herring, usually made in Germany.

Over time, the preparation and serving of herring under a fur coat has undergone many changes. At first, I traditionally prepared the dish immediately in a wide and deep plate, in which I served the dish on the table. The depth of the vessel made it possible to tighten a freshly prepared dish cling film, and store it in the refrigerator until the next day. Considering the peculiarities of our holiday feast now, and our hot weather at Christmas, I prepare 2 servings of this appetizer separately, and the bulk of the dish, in a hermetically sealed container.

By the time the dish is served, the juicy beets color the layer of mayonnaise, and the serving looks even more elegant.

This year, I used a fresh portion of herring under a fur coat for lunch, and realized that if the beets are very juicy, then you can get by with just a small teaspoon of mayonnaise, which is mixed with all the other ingredients of the dish as you eat. So I made a portioned serving for Christmas lunch.

That is why, and also taking into account the different composition of the ingredients used, I decided to publish my dietary version of herring under a fur coat, which is actually layered salad with diced herring mixed with onions, covered with a thin layer of low-fat sour cream, finely chopped hard-boiled eggs, a layer of tender boiled carrots and juicy beets.

Ingredients:

  • 3-4 carcasses of boneless salted herring fillets (or 2 cut and cleaned herrings)
  • 1 large sweet onion (white or red), make sure the onion is not bitter to taste
  • 4 large hard-boiled eggs
  • 4-5 tablespoons low-fat sour cream
  • 3-4 boiled carrots (the quantity depends on the size of the carrots)
  • 3-4 boiled beets in skins
  • if the herring is very salty, you do not need to add salt and pepper, but if the herring is not very salty, or its layer at the bottom is very thin, salt and ground black pepper to taste
  • gluten free mayonnaise, 4-5 tablespoons for traditional layer, 5-6 teaspoons for individual serving
  • additional egg and dill for decoration (optional)

I don't use boiled potatoes, which is usually present in all recipes for herring under a fur coat, just as I do not use it in Olivier salad with smoked trout, or as part of a vinaigrette with homemade sauerkraut.

Preparation:

  • place the beets in cold water, bring to a boil and cook until tender until the beets are soft throughout
  • pour cold water, let cool, cooled beets are easier to peel off the skin
  • boil the peeled carrots, it is important not to overcook the carrots, they should be cooked, but not too soft
  • Boil eggs hard, cool in cold water
  • prepare a serving plate/plates or container suitable for storage in the refrigerator
  • cut the herring fillet into cubes, about 1 cm, make sure that the fillet does not contain bones
  • chop the onion on the thinnest setting of a mandoline grater, cut the chopped onion rings into 4 parts
  • mix herring with chopped and chopped onion
  • place the mixture at the bottom of the prepared container
  • put sour cream and spread it in an even layer that will cover the herring layer
  • finely chop hard-boiled eggs
  • spread the eggs in an even layer on top of the sour cream
  • cut the carrots into small cubes, cover the egg layer with a layer of carrots
  • if using salt and pepper, sprinkle it over the carrot layer
  • peel the beets
  • rub on coarse grater beets (the process will color your hands)
  • if the beets release a lot of juice, do not use the juice
  • lay the grated beets and distribute them evenly on top of the carrot layer
  • cover the prepared dish with mayonnaise, spread the mayonnaise in a thin, even layer using a spatula

  • let the dish soak in the refrigerator for 4-5 hours, or until the next day

Options for serving herring under a fur coat and serving the dish on the table are presented in the gallery below. You can reduce the amount of mayonnaise; oddly enough, the taste will not suffer from this. Absolutely dietary option presented in the form of a herring separately, and “fur coats” in the form of a vinaigrette separately. This option can be used if the active phase of weight loss cannot be disrupted when using a high-protein nutrition strategy (corresponds to stage 2 of the Dukan diet).

In any version, this dish is very fresh in taste, juicy in consistency and light in feel. If there are no problems with being able to buy herring, and this dish is to your liking, it can be prepared simply as a light snack salad, which is quite balanced in the ratio of proteins (herring and eggs), high-quality carbohydrates with fiber (carrots and beets) and fats (a teaspoon of low-fat sour cream and a teaspoon of mayonnaise per serving). For me, this is a wonderful and juicy salad, especially if you also remove the herring (!), or replace it with freshly salted salmon, or a couple of pieces of hot smoked trout. I’m not a herring soul like my husband, and you can’t find a good herring during the day with fire.

Mayonnaise

  • 4 pcs
  • (you can take corn or refined sunflower) - 100 ml
  • (Kikkoman) - 2 tsp.
  • 1 tsp.

  • (Slightly larger than average or 2 small pieces) - 1 piece
  • (Medium or 2 small pieces) - 1 piece
  • (small or one large) - 2 pcs.

  • (Larger than average) - 1 piece
  • or iwashi (unrefined) - 300 g

Let's start by preparing Kikkoman quail egg mayonnaise.

Classic recipe- this is, of course, wonderful. But time does not stand still, and if we find a way to improve the taste famous dish, then why not. So I modified the recipe for classic mayonnaise to suit my taste, and believe me, it turned out wonderful.

I make mayonnaise using quail eggs. Why quail? Well, firstly, they are healthier, and secondly, 3-4 eggs yield almost half as much mayonnaise as a whole chicken. And since we eat little mayonnaise, this amount is just enough so that it does not spoil. We MUST take eggs without cracks and wash them with soap. Most harmful bacteria and viruses are found on the shell. Break into a blender glass.

Add a teaspoon each of sugar, mustard and balsamic vinegar. You can use regular vinegar, but balsamic will add more flavor.

Instead of salt I use soy sauce Kikkomam. As you know, it is a natural flavor enhancer, and generally harmonizes well with eggs.

And at the end I add freshly ground black pepper for flavor. Since the aromatic substances in pepper dissolve well in fats, and mayonnaise is a fatty sauce, then pepper will come in handy here.

Now we begin to blend with a blender, gradually adding vegetable oil. This time I splurged on olive oil. For mayonnaise, I use simpler oil every day: corn or refined sunflower. I knock it down immediately at high speeds. The only thing is that the blender itself has to be moved up and down so that the oil that we pour from above gets under the blender. The process is somewhat complicated, because the glass tends to jump up behind the blender, and I don’t have a third hand to hold it. I get out either with the help of my husband or daughter, and if no one is around, then I put the neck of the bottle on the edge of the glass and thus hold it. I hope these little things are useful to you too.

The mayonnaise is almost ready. I indicated approximately the amount of oil. Because whatever one may say, the size of the eggs is always different. The thickness of mayonnaise depends on the amount of oil. The more it is, the thicker the mayonnaise. When we reach the thickness we need, stop whipping. Let's try. If necessary, balance the taste with soy sauce, vinegar and sugar. Beat again. And the mayonnaise is ready. It can be stored in the refrigerator for at least a week.

Usually vegetables for herring under a fur coat are boiled. But when cooking, in any case, the vegetables give part of their taste to the water. Therefore, I prefer to bake them, first wrapping them in foil. Carrots are baked for 40-60 minutes depending on size. Potatoes need 1 hour, beets - 1.5 hours. It takes longer than cooking, of course, but it's worth it. Boil the eggs as usual.

Cool the vegetables, peel them, and grate them on a coarse grater.

We clean the herring, remove the bones, and chop finely. Be sure to try the herring. Sometimes it is very lightly salted, and as a result the fur coat comes out fresh. Depending on the salinity of the herring, we determine how much salt we will put in the vegetable layers. It is almost always necessary to add salt to them, because salt excites the taste buds, and the layers will be brighter. If the herring is salted, then we do not add enough salt to the vegetables. Well, unless it is very salty, then there is no need to salt the layers.

Cut the onion into small cubes.

Let's start collecting the salad. You can cook it traditionally on a large shared platter.

But I decided to use the mold for portioned salads that Natasha (Pingvin72) gave me. In general, all my latest recipes are dedicated to her, because I actively use the contents of her gift to me. So, we digress. First layer of onion.

Now my secret. Usually add a layer of each vegetable. Spread generously with mayonnaise, and after cooking, the salad should sit for several hours to soak in. I do things differently. I just pre-mix each layer with mayonnaise. Since potatoes themselves are not juicy, the most mayonnaise goes into them - 1 tablespoon. Season and mix thoroughly.

I have already written about adding salt to the vegetable layers. So, in potatoes I use soy sauce instead of salt. It goes very well with potatoes and gives it unique taste. First add a teaspoon, stir, taste and add more if necessary.

Place potatoes on top of herring. I spread it in small portions and carefully distribute it with a fork. This layer is rather dense, so laying it out is somewhat difficult, but possible.

For people who cannot imagine their holiday table without their favorite dishes, a dietary herring under a fur coat was developed.

This dish will have a delicate taste and a lighter structure than a traditional salad.

And all this thanks to small adjustments by which fatty foods are replaced with healthy alternatives.

Considering that this salad is not a new-fangled introduction, additional ingredients can add a touch of freshness to the familiar taste.

How to cook herring under a fur coat - a dietary option

In order for a salad to be called dietary, first of all it should be limited from mayonnaise. It is this sauce, especially store-bought, that can increase the number of calories in a dish several times.

Initially, you need to prepare the following ingredients:

  • lightly salted herring – 1 piece;
  • beets – 1 piece;
  • carrots – 2 pcs;
  • onion – 1 piece;
  • potatoes - 3 pcs;
  • egg – 3 pcs;
  • sour cream – 350 gr;
  • mustard and salt to taste.

  1. The preparation of the salad will begin by boiling vegetables and eggs in salted water. They are cooked in different pans.
  2. At this time, you need to take care of the herring - clean it, remove the bones and cut it into small pieces.
  3. Next, the finished vegetables need to be peeled and grated.
  4. The eggs are divided into yolk and white, and also crushed.
  5. The chopped fish is laid out on the bottom of the plate. Peeled and chopped onions are placed on the herring. You can lightly sprinkle it with vinegar to prevent the onion from becoming bitter.
  6. Then comes a ball of potatoes, which is sprinkled with salt and then smeared with sour cream and mustard sauce. Next is the turn of carrots, egg whites and beets.
  7. Each layer is smeared with sauce; it is recommended to decorate the dish with the remaining grated yolk.
  8. It is advisable to consume it 2 – 3 hours after the salad has been soaked.

Herring under a fur coat without mayonnaise and potatoes

This option is suitable for people who care about proper nutrition. It is prepared as follows:

  • beets (1 piece) and carrots (1 piece) should be filled with hot water, salted and cooked until tender. After this, cool and remove the skin, which easily comes off after cooking. Grate vegetables into different plates on a coarse grater;
  • Peel the skin from the herring (1 piece), then fillet it, carefully selecting all the bones. Now it can be chopped into small cubes;
  • boil 2 - 3 eggs in salted water, cool and grate;
  • to prepare the sauce (replacement), you need to mix low-calorie yogurt (300 g) or cottage cheese with mustard (10 g) until a homogeneous mass is formed;
  • assemble the dish for presentation in this order: carrots, herring, beets, egg. Carefully coat each layer with the prepared sauce.

Dietary recipe for herring under a fur coat with apple

Another unusual salad design, for which you will need sour apple. So, to prepare the salad, you will need:

  • herring fillet – 1 piece;
  • apple – 1 piece;
  • potatoes – 1 piece;
  • carrots – 1 piece;
  • large beets;
  • eggs – 2 pcs;
  • low-fat yogurt – 200 g;
  • mustard – 1.5 small spoons.

Chop the loin into squares.

Boil potatoes, beets and carrots in their skins. Boil the eggs hard. Cool everything, peel off the skin and rub through a grater.

Chop the onion and pour boiling water over it for 10 minutes, then squeeze out excess liquid.

To prepare the sauce, just stir the yogurt and mustard well, you can add a little boiled yolk.

Lazy herring under a fur coat

If you are sorely short of time, but you really want to prepare a salad, then a similar recipe will come in handy:

  • boil 200 grams of beets, 200 grams of potatoes, 200 grams of carrots. Then all the vegetables are peeled and cut into cubes;
  • 1 herring is also filleted and cut into small pieces;
  • chop the onion into cubes;
  • combine all the ingredients in one container, add a little pepper, salt and salad sauce;
  • the sauce is prepared from 150 grams of low-fat sour cream and 1 teaspoon of mustard;
  • After thorough mixing, the dish is ready.

Dietary recipe for herring under a fur coat in lavash

The table decoration can also be served by an original presentation of the dish - in pita bread.

Thanks to this base, it becomes possible to divide the salad into portions and take it with you for a snack to work or on vacation outside the city.

The salad is prepared in the following steps:

  • boil beets (2 pcs), potatoes (2 pcs), carrots (2 pcs) in salted water. After which the vegetables are cooled, peeled and grated on a fine grater;
  • hard boil 2 eggs, peel and chop;
  • cut salted herring fillet into small pieces;
  • lay out 1 sheet of pita bread and divide it into 4 equal parts. Apply a thin layer of sauce to the first piece and spread the grated beets, brush the sauce again and place the second piece of pita bread on top. After brushing with sauce, add carrots. Perform the same steps with potatoes, eggs and herring;
  • After the pita bread is tightly rolled into a roll, it should be wrapped in cling film and placed in the refrigerator for a couple of hours to thoroughly soak all the salad balls.

Herring salad under a fur coat roll

  1. Prepare herring fillet (1 piece) - select the bones and cut into small squares.
  2. At the same time, boil beets (2 pcs.), carrots (2 pcs.) and potatoes (2 pcs.). When the vegetables are cooked, they need to be cooled, peeled and grated.
  3. Then take one onion and also chop it into cubes. You will also need to hard-boil 2 eggs, remove the shells from them and pass through a coarse grater.
  4. Now you need to use cling film. They spread it out and begin to lay out the layers.
  5. First, spread out the beets, spreading them over the film so that a rectangle is formed. Place the potatoes on the beets and coat with sauce, sprinkle with onions, then a layer of eggs and sauce. Next are carrots, herring and another layer of sauce.
  6. It is advisable to prepare the sauce yourself in order to control the fat content of the prepared dish. Low-calorie yogurt and mustard are traditionally used for this.
  7. Next, you should take the edge of the film and carefully twist the roll, lightly pressing it with your hands so that its edges are tightly closed.
  8. Place the finished roll in the refrigerator for 40 minutes.
  9. Before serving, the dish can be decorated with sauce or herbs.

Dietary version of herring under a fur coat without herring

This is an original version for vegetarians and allergy sufferers that can decorate the table.

The dish contains the following components:

  • boiled potatoes - 300 g;
  • boiled carrots – 250 g;
  • beets – 300 gr;
  • organic silken tofu (bean curd) – 300 g;
  • avocado – 1 piece;
  • nori seaweed – 3 pcs;
  • salt to taste;
  • lemon juice– 5 ml.
  1. Grate the boiled vegetables on a medium grater. Chop large seaweed leaves with scissors.
  2. You will need to beat the silken tofu in a blender and add vinegar (15 ml), salt, mustard (10 g) and oil (40 ml). This will create a special sauce for dressing the salad.
  3. Place potatoes as the first layer. The second layer is carrots, they are leveled with a fork and salted. Then comes the turn of the avocado, which is best grated just before putting it in the salad and sprinkled with lemon juice to avoid darkening.
  4. Between layers of vegetables you should add sauce and nori each time.
  5. At the last stage, grated beets are laid out, covered with a layer of sauce.

By the way, the same can be said about homemade mayonnaise, because its calorie content is also very high. For this dish, you need to use exclusively PP mayonnaise, which must be prepared from dietary ingredients. This mayonnaise is prepared based on natural yogurt, and therefore the calorie content of such a product will be minimal!
  • Less potatoes. Another high-calorie ingredient in regular herring under a fur coat is potatoes. Although nutritionists do not recommend completely excluding this product from your diet, you should not abuse it either. If you cannot refuse potatoes when preparing pp herring under a fur coat, then you should reduce its quantity. Make the potato layer as thin as possible, so you can easily reduce the calorie content of your dish.
  • Replace potatoes. For those who are ready to resort to more radical methods and completely abandon this ingredient, we offer a good alternative. Celery root is a great substitute for potatoes and you won't notice much of a difference. By the way, the calorie content of celery is only 38 calories per 100 grams! Another good way replacing potatoes is using eggs! Instead of a potato layer, you can make an egg layer, and if that’s not enough for you, you can remove the yolk and use just the white!
  • Let's keep an eye on the layers. Another important rule for preparing pp herring is the thickness of the layers. You don't have to make all the layers the same! Moreover, it is better to make the layers of the lowest-calorie ingredients thicker, so you will reduce the calorie content ready-made dish. Make the layer of beets and celery thicker, and you will get an excellent herring under a fur coat!

PP herring under a fur coat

For this pp fur coat you will need the following ingredients:

  • 1 large beet.
  • 1 medium carrot
  • 1 small celery root. Boil all the vegetables, peel and grate.
  • 1 herring fillet. Cut into small pieces.
  • 1 small onion. Let's chop.

For proper mayonnaise, prepare the following ingredients:

  • 250 grams of yogurt. We use only natural yogurt without various additives. Greek yogurt or even Activia will work just fine.
  • 1 teaspoon mustard
  • 1 tablespoon lemon juice.
  • Salt to your taste.

Mix all the ingredients for mayonnaise in a blender and obtain a thick, homogeneous mass.

Let's start making layers:

  • herring+onion layer+celery layer+sauce+carrots+sauce+beets+sauce.

Now you need to put the dish in the refrigerator for a couple of hours to let it brew.

Dietary herring under a fur coat

Another simple one healthy recipe. For this pp fur coat you will need the following ingredients:

  • 1 medium beet and 1 medium carrot. Boil or steam vegetables. Clean and grate.
  • 3 eggs. Boil, peel and finely chop. We will use them instead of potatoes.
  • 1 small onion. Finely chop.
  • 200 grams of herring or red fish fillet. Cut into small pieces.
  • 200 grams pp mayonnaise. Prepare according to the previous recipe.

Mix herring with onions and add a little mayonnaise. Mix. Then we start laying out the layers:

  • herring with onions+eggs+sauce+carrots+sauce+beets+sauce.

Place in the refrigerator for 2 hours!

  • Boil it.
  • Cut the herring. Remove as many bones as possible, remove the skin, and wash the fillets. Cut the fillet into small pieces.
  • Grate the boiled vegetables on a medium grater or use a food processor. Each vegetable is placed on a separate plate.
  • Place the herring on the bottom of the salad bowl, sprinkle onions on top. Sprinkle the onions with lemon. This will remove excess bitterness from the onion and marinate it a little.
  • Next, lay out potatoes, carrots, grated eggs, and beets in even layers. Spread each layer with sauce and add a little salt if desired. Also sprinkle a layer of carrots and beets with lemon juice.
  • Grate the boiled egg on top for decoration. It is advisable to do this before serving so that the salad looks fresh.
