Ingredients:

for biscuit dough:

  • egg – 4 pcs. (large)
  • flour – 175 g
  • sugar – 155 g
  • soda or baking powder - 0.5 tsp.
  • vegetable oil – 7 tsp.

for filling:

  • apple jam or thick jam – 220 g
  • for decoration:
  • oatmeal– 4-5 tbsp. l.
  • vegetable oil – 3.5 tbsp. l.
  • cane sugar – 4 tsp.

Cooking method


  1. Beat the egg whites with 120 g of sugar until stiff foam, on which the marks from the whisk are clearly visible and adhere, forming a pattern. Fine sugar is recommended for the dough.
  2. Grind the yolks with the rest of the granulated sugar. Pour the vegetable oil into the mixture, adding it slowly, one tablespoon at a time, into the mixture and continuing to whisk. Add soda to the yolk part, after dissolving in 0.5 tsp. vinegar or lemon juice. Mix the ingredients well. The mass should thicken a little.

  3. Pour the yolk mixture into the white foam and mix with air movements from the bottom of the bowl upward, as if folding air layers.

  4. Sift the flour several times and add it to the dough in small portions. Stir the biscuit mixture until smooth. You can also read a more detailed description.

  5. Line a baking tray with baking paper and grease well vegetable oil on each side. Distribute the dough according to the size of the pan, no more than 1.5 cm thick.

  6. Place the cake in an oven preheated to 180 degrees for 17 minutes. When the top of the sponge is golden, remove the pan from the oven.

  7. Prepare the topping. To do this, mix oatmeal with sugar and vegetable oil.

  8. Grease the sponge cake thick jam or jam. Decorate the cookie crust with oat streusel.

I offer another version of biscuit cookies. This is a very simple recipe that comes in handy when guests are already on the doorstep. Once upon a time, back in childhood, my mother cooked incredibly delicious cookies from biscuit dough– the plate with such a delicacy was empty instantly! This biscuit dough is quick and easy to prepare and bake. Since our cookies are thin, they will last about ten minutes in the oven. Strawberry jam will complement the delicate and soft taste of the sponge cake. Or any other of your choice.

The quantity of ingredients implies baking two batches of products. I do this on two baking sheets at the same time. I put them on different levels in the oven and turn on the convection. It works out very quickly and economically. In a short time, 32 single cookies.


Ingredients:

  • eggs – 3 pcs.
  • sugar – 3/4 cup
  • flour – 3/4 cup
